Strawberries & cream eclairs… plus a few profiteroles 😆. Haven’t made choux in a while so this was fun. The best they have ever come out, absolutely loved making these. Didn’t want to make Crème Pat but wanted a similar taste so I whipped double cream with condensed milk and some vanilla bean paste….tasted amazing! Topped with white chocolate, freeze dried strawberries, strawberry chocolate curls and fresh strawberries. Will definitely be trying some more choux recipes soon.

Pina Colada cupcakes 🧉🧁! Made these for a cocktail party I went to so tried to keep in with the theme. Unfortunately they don’t have rum in them as I find it makes my icing go too soft and I don’t get enough of the flavour. I used pina colada flavouring for the icing and fresh pineapple and desiccated coconut in the cake mix. They were so soft and fluffy…delicious if I do say so myself. Will definitely be doing this recipe again!

I’m very sorry guys, I haven’t posted in ages! I’ve been so busy with work lately I’ve hardly had time to bake. I made some gingerbread cookies the other day … and made my own royal icing! They’re so tasty. Not so hard you break your teeth on them either. Will definitely be making these again and try improve the piping 😆.
