It's a grey and damp Monday morning after a warm and fun payday weekend all of which makes you easy prey for el diablo azul, THE BLUES. And I am far from being a medical professional but I believe a powerful and confident antidote to beat el diablo azul is 2 coffees and a cookie. Specifically 2 and a lemon, poppy seed and vegan white chocolate cookie.
We've got Rocket Summer on espresso, a washed & sun dried coffee from Tanzania- bright and sunny up front, sweet and biscuit-y with oat milk. And Walking Wires on batch- a Burundi coffee, natural & 48hr anaerobic fermentation. Juicy, stone fruit sweetness.
Shout out to .pizza for the lovey cups.

Big, bold heavy hitting menu for the weekend cause you've made it thru another month and you deserve a treat ya wee rascal so you are. This week I solidly and solemnly promised myself I would check everything today before I left so I could offer a comprehensive and facts forward menu but I forgot like some lurid buffoon and now I'm dribbling with anxiety that I've forgotten something swell from the menu. F**k it, fun surprises tomorrow maybe.
Mississippi mud pie buns are back this week, one of our all time most popular bakes (side note- go do some learning about the Mississippi river, that thing is fascinating). .belles has crafted a rhubarb tart with an almond frangipane that is so stunningly gorgeous to see that I almost dread to think of you heathens smashing it up- yet I encourage you to do so as it's ridiculously tasty. Same with the lemon and blueberry sponge cake- it's style, it's grace, it's chic and it's mind bogglingly delicious. Coffee and walnut financiers that are just the right size to enjoy with a coffee and not leave you feeling like a Nissan Micra.
Best croissants and pa.choco in the world- France has recently said it's quitting all patisserie now it has acknowledged no one does it better than us.
Bread side of the business is coming out swinging with some real strong numbers. Heritage grain yellow wheat sourdough with fresh a) oregano b) rosemary and c) sage. Focaccia with a) kimchi or b) padron peppers or c) tandoori with mango chutney. Ding d**g, sunshine. Stecca with fresh peaches and thyme (stecca is kinda like ciabatta and this is something we've made before, old Bandits will be nodding wisely whilst you new Bandits are all like, stecca what?).
Mango matcha if that's yr thing, iced coffee if it's hot, horchata before everyone else tries to make it and makes themselves look silly.
Ok! I'll probably put some jazz on stories in the morning if I've forgotten something. We'll see.

MISSISSIPPI MUD PIE BUNS 🌞 always a popular choice amongst bun lovers- our classic cinnamon buns but sans cinnamon but full of chocolate custard and pecans and topped with our classic vegan cream cheese frosting and pulverised Ritz crackers and Biscoff biscuits. And since it's getting warm I recommend accompanying yr beautiful buns with a cool glass of horchata, freshly made right here. And if yr not familiar with horchata then wtf, it's delicious- spiced rice milk sweetened with condensed milk, we use a coconut version to keep it delicious for everyone. Served cold with ice it's incredible and perfect when it's a touch warmer. And especially with a MISSISSIPPI MUD PIE bun. Alright!

.uk vegan lamb kebabs, plant based Greek yoghurt with a hefty dose of Zero to Gyros Greek seasoning. Home made flatbread, oven chips with loads of EVOO and oregano. Smokey pickles and jalapeños. A bunch of bits from a very busy, very fun weekend- tried a new shape for the cardamom knots, was very happy with the croissants despite getting jolly scared of how they'd do in the warmer weather. Fresh and very exciting delivery from . Drank about 12, 14? coffees. Bread was exceptionally good today, very happy with the adjustments made to them to account for the warmth. Blueberry and jalapeño sourdough was lots of fun. Listened to many hours of a book about Richard Nixon, that's been fascinating. Feel bad for not sharing more of the gorgeous blueberry and lemon cake we had cause we all agreed it's stunning, wonderful and very delicious. Horchata has made a beautiful and mighty comeback.

Got home this afternoon and made a veggie lasagna packed full of literally thousands of vegetables and a spinach & cashew ricotta and mushrooms and all sorts of delicious jazz but I now can't really remember what we're making tomorrow. So I feel doing a menu post is cruel and weird when I'm fully confident I'm forgetting things and not ironing out all the fine details but I've done a menu post every Friday for weeks now and we've been hella busy on Saturdays so I'm utterly petrified of bringing on some hideous, gross, face melting curse if I don't do one.
I remember sampling the lemon & blueberry sponge cake this morning and it was so good I thought time had stopped. It's already a known fact we make the best croissants, vegan or otherwise, since the time of the dinosaurs. I remember shaping the sourdough with blueberries & jalapeños cause there was so much of the b.berries and jalapeños I could hardly handle the beast. The financiers we might have to charge y'all just to look at them they're so gorgeous.
So, yes- in conclusion there might be some surprises tomorrow due to my grotty old brain being terrible. Oh! Horchata! That's what I'd forgotten. It's insanely good, it's fantastic, it's available tomorrow and it's perfect for these warmer days.

For the fanciers of the finer things we have a Friday special that's going to rev yr engines nicely- apple crumble Danish with vanilla custard. Guaranteed good time, outstanding work once again from .belles. crisp croissant pastry, crisp green apples, sweet vanilla custard (shout out to the best vanilla from always and forever), buttery oaty crumble to finish the whole thing off.
Perfect with a coffee- we've got on espresso AND batch and you should try both.

MASSIVE CONGRATULATIONS AND THANK YOU to all our lovely customers today- it was another solid gold humdinger of a day and I can't quite believe it. My thanks go 50/50 to you, loyal customer, and our incredible team- we are blessed with the best when it comes to bakers and baristas and I don't take it for granted.
I know Saturdays are good for fun things and fast things and being reckless and sexy and cool and sinister and weird so choosing to spend a bit of that special time and some precious money with us means the whole world to me- thank you.
If you were in anyway disappointed or let down by your Bandit Bakery experience then do please get in touch. We can only get better with feedback and I want people to be honest with me.
