Avant que s’opère ce changement radical de vie, il y a dix ans déjà, avant la boulangerie, il y avait ce tableau.
Accroché là, dans un lieu de passage de notre appartement londonien, toujours à portée de regard sans qu’on s’y arrête vraiment, comme un contrepoint à nos vies lancées à toute vitesse.
Un paysage calme, presque en retrait, qui faisait déjà partie du décor.
Il introduisait autre chose: des cycles plus marqués, le temps long, l’attention au vivant.
Ce tableau nous suivait déjà, bien avant que nous changions de vie.
Comme une autre manière d’habiter le temps, discrète, persistante.
Aujourd’hui, nos pains en sont peut-être la continuité.
Cela se retrouve dans nos gestes, dans les fermentations, dans la matière laissée libre ; une manière de travailler avec ce qui est là, simplement, à l’image de cette sélection de notre large collection de pains spéciaux.
Before this radical life change took place, ten years ago already, before the bakery, there was this painting.
Hanging there, in a corridor of our London apartment, always within sight without ever truly being noticed, like a counterpoint to our fast-moving lives. A calm landscape, almost withdrawn, that was already part of the background. It introduced something else: more marked cycles, a slower sense of time, an attentiveness to living things.
This painting had been with us all along, long before we changed our lives.
Like another way of inhabiting time, discreet, persistent.
Today, our breads may be a continuation of it. You can sense it in our gestures, in the fermentations, in the material left to evolve freely; a way of working with what is already there, simply; much like this selection from our wide range of specialty breads.
