Something I've been intending to try for a while - a gluten and dairy free crêpe. I bought a bag of teff flour from and used our usual crêpe recipe with it replacing the he wheat flour and a gluten free oat milk rather than cows.
The result was actually really good, still quite a light batter and it has plenty of flavour. Yes, I prefer the traditional way of making it but if we are doing an event where hosts request gluten and/or dairy free specifically these compliment the gluten free buckwheat galettes we make really well.
We tried various toppings - lemon and sugar, caramel with and without chocolate, and then, as photographed here, fresh raspberries and blackberries from our garden - delicious!
