Making this cake almost feel like making an Entremet, a sophiscated multi-layered French mousse based cake. Very time consuming and require careful planning.

This cake has 4 layers: a mango compote,strawberry compote, strawberry vanilla cake base & white chocolate mousse with lemon zest. And finally finish off with shiny & reflective glaze icing made from gelatin, sugar, condensed milk & white chocolate.

Since I don't bake cake everyday, I do not keep stock so for this cake, everything is made fresh from scratch by me 😁. And all the layer require to be frozen for at least 6hrs means it is in & out from the freezer for the last 2 days. So it takes 3days to prepare everything from the fruits puree until the final touch 💪. But knowing the customer is happy & satisfied make it all worth it. Hope she and her guest enjoy the cake.

I always love theme's birthday cake although at time, the request can be quite challenging😁. But to see the happy faces is worth every challenge😍
