Yogurt Pie

I had the urge to make a pie but wanted to keep it for the kids. However, with absolutely no usable fruit in my kitchen, I was left digging through the pantry looking for anything pie-friendly. After contemplating chickpeas in desperation, I decided to look around online for inspiration and I came across a Greek yogurt cake by .nach.zuhause

Thankfully, I did have yogurt in the fridge, so I filled my typical pie crust with a yogurt filling inspired by that recipe. This version contains only yogurt, sour cream, honey, vanilla, and gelatin — and it turned out better than I expected! With only 100g of honey in 10 servings, I also didn’t feel too bad letting the kids have seconds.

Unfortunately, I had forgotten that the yogurt I was so happy to find for the pie was actually planned as Tzatziki for dinner… Thanks to Hof Großhans, our local dairy farm, for having fresh yogurt available after hours! …and to for reminding me 😉

I had the urge to make a pie but wanted to keep it for the kids. However, with absolutely no usable fruit in my kitchen, I was left digging through the pantry looking for anything pie-friendly. Zopf

I decided to make a Zopf for Easter snack at home. First time making a Zopf and braiding with four pieces, but it went more smoothly than expected. A Zopf (or Hefezopf, as it’s called in German) is typically an enriched dough made with yeast, but I made this one with sourdough (of course) and honey so it’s naturally leavened and refined sugar free — I adapted the textbook Hefeteig recipe I memorized for the baking exam. Will be making it more in the future! Need to try the five-piece braid next…

Breakfast Bars

Almond butter, spelt flakes, pumpkin seeds, dried strawberries, and more — these bars have it all. These are a favorite in our house as a quick morning snack. The boys grab them before running off to Kindergarten… sometimes they even serve as motivation for them to get dressed on those cold, early mornings.

I’m working on a version using sourdough to pre-ferment the spelt. Stay tuned!

Apple Tart

I made an apple tart for Sunday snack this past weekend. With the exam behind me, I am excited to get back to recipe testing and decided to play around a bit.

This recipe is inspired by a Tarte aux Pommes but I kept it kid-friendly (refined sugar free) with a non-traditional filling and glaze.

Crust: flour, butter, water, salt
Filling: sliced apples, applesauce, lemon juice, cinnamon, salt
Glaze: honey, water

Next time I’ll pack the apples closer and improve the layering, but the applesauce base was just right! When the apples are good, you just don’t need much else — This time, apples from Obsthof Reiner

Müsli Cookies

These are made with my kids’ favorite Müsli from , which contains rolled oats, raisins, wheat and spelt flakes, almonds, sunflower seeds, and dried berries ( ). The Müsli mix adds a nice twist to a traditional oatmeal raisin recipe. Hopefully, the Kindergarden teachers will enjoy them up in the forest today!

Lemon Curd Tart

Back into my comfort zone today with a member of the pie family — a lemon curd tart. So light and fresh… the combination of a pressed cookie crust and a classic lemon curd was just right. Served with a little whipped cream and everyone was asking for seconds. Can’t wait to make it again in the summer with fresh raspberries on top!

Birthday Cake

With two adults and three kids in our house, we celebrate a lot of birthdays. I always try to do something different with the cakes and every time something goes wrong 😅 Seriously. My husband already knows there is likely to be an emergency grocery run the night before every party so I can remake the cake. Today is no exception… I was able to save it this time, but the cake was underdone and the glaze was too thick. It tasted good, but still. Good thing my kids are young and couldn’t have cared less about how it looked as long as it had sprinkles on it!

I should really start making birthday pies instead…
