We get it… soy sauce in a drink sounds weird. but you have to TRUST US ☀️
 
Cold-brewed aged pu-erh, szechuan pepper, ginger and just a touch of soy sauce somehow turn into something floral, bright, sparkling and ridiculously good in the sun.

Made for terraces, late lunches and sunny weekends.

Yesterday was Mother’s Day - so naturally, we celebrated ours 💛
 
Meet our SCOBY - the “mother” culture that makes our kombucha possible. She might not look like much, but she’s alive, thriving, and responsible for every batch we brew.

No mother, no fermentation. No fermentation… no BOUCHE.
 
A thank you and shoutout to the jelly-like queen who’s often misunderstood 🫧
 
(Why is it called the “mother”? Because during fermentation, the SCOBY creates new cultures - literally giving life to the next batch.)

A cold-fermented tea infusion built on aged pu-erh, layered with Szechuan pepper, ginger, and a subtle savory note.
 
Deep, earthy, structured - with gentle warmth and a clean, dry finish.
Like all PROXYs, this is a one-off batch.
Brewed once, not repeated.
 
Tasting Note:
Warm, brooding earthiness on the nose. Aged pu-erh meets dry Szechuan spice and soft ginger.
Dense and savory on the palate, lifted by a slow, tingling warmth and quiet umami depth.
Long, dry, faintly smoky finish.
 
Pairing:
Made for the table.
Miso aubergine, smoked duck, aged gouda, mushroom risotto.
Serve still, lightly chilled, in a wide glass.
