My wife asked me yesterday to pick up some special kind of bread. It took me sometime to find the bakery which was well ‘hidden’ in a neighbourhood I rarely, if ever, visit. As soon as I entered the bakery I was instantly hit by a passionate wave of positivity, fuelled by enthusiasm from the only employee there.
I immediately sensed a hero of the week and it didn’t take me long to mentally start writing the post you are now reading.
The person who blew me away yesterday is the same person we refer today as our . Evros Christofi.
Evros story is remarkable. He worked for 33 years at the Pancyprian Association of Bakers, where he accumulated knowledge and experience when it comes to making bread. At Pancyprian he started from the Accounts department and ended in training and development. His studies in Lyon, France was also integrant to his today’s success.
Finally, in March 2016 he decides to open up his own bakery, (“Bread and Salt” / “Ψωμί και Αλάτι”) making alternative bread, mainly, Zea flour which is an ancient grain that produces flour with a high nutritional value and quality as well as Dinkel Spelt which is wheat that has been cultivated since approximately 5000 BC.
Evros main premise is that alternative ways of making bread attract people looking for a healthy diet but it is your attitude that determines customer loyalty. Probably the reason I waited in line to pick up my wife’s order and to take a photo with him.
