Summer Table. 2nd edition in Morocco ✨

I’m still somewhere between a new home, a new kitchen, and a new culture. But again, community became my shelter.🙏

I cooked a 7-course plant-based menu, friends cooked with me, there was piano in the background, wild flowers on the table, laughter everywhere. And at some point, it all just felt a little magical and very delicious.

I’m so grateful for the wild flowers arrangments, the music played by my son, the handmade Japanese icing cookies from , the helping hands and good vibe.

My heart melted into the music and the plantbased brunch. I mean food, music, community and my son playing the piano. It's really homemade, good stuff.

My table keeps getting longer as the great conversations around the table. The kitchen is filled with helping hands, so much laugh and creativity with friends.

I’m practicing again building up products from scratch, since I went far from my sources, great network and friends. But I try to give everything more substance and creating gives me space to step outside my wild mind. Let's connect and enjoy the moment and the menu.

Coconut chia bowl with mango puree, peanut butter, spirulina, granola. Sourdough bread with green peas, pesto, avocado, almond ricotta, marinated tomatoes, pine nuts. Juices. Banana bread. Crackers with guacamole and wood smoked carrots. Msemmen. Amlou. Hummus and olives.

Sunday’s treat:
Moroccan tea with banana–cinnamon bread, topped with plums, pears and walnuts. My soft and juicy spin on this classic. You can even add some sourdough discard to this recipe.

Recipe:
Mash 320 g banana and mix with 50 g raw sugar, 90 g soy cream, and 45 g coconut oil (room temperature).
In another bowl combine 190 g flour, 6 g baking powder, 2 g baking soda, 4 g cinnamon, plus a little vanilla and salt.
Add the dry ingredients to the wet ingredients and mix until just combined.

Oil two small cake pans and dust them with a bit of almond flour to prevent sticking. Pour in the batter, top with sliced plums, pears, and walnuts, and bake at 180°C for 45 minutes.

Thank you for the amazing briouates and sharing this culinary journey. Briouates are small moroccan appetizers filled with cabbage, carrot, paprika and lot of spices. They are tiny bites with big flavor. And so crispy. Love them.🥰
