The most stressful 5 seconds for every macaron baker. Will it be hollow, or will it be perfect?
✨I’m sharing the 7 secrets that helped me move from “hollow heartbreaks” to these perfectly dense, pillowy shells.
I believe the best things take time—especially that 24-hour maturation that makes all the difference.
➡️The Stability Secret: Add 4% Egg White Powder of your egg white weight. It’s the “insurance policy” for your meringue, helping to stabilize the structure and prevent the shells from collapsing into hollows.
➡️Low and Slow Meringue: Don’t rush the bubbles! Use a medium-low speed for a longer period. This creates “small, uniform air bubbles” that are much stronger and more stable than large, shaky ones.
➡️The 24-Hour Transformation: Patience is an ingredient. Sometimes a shell feels slightly empty right off the tray, but after filling and maturing in the fridge for 24 hours, the moisture redistributes, making the inside perfectly full and chewy.
➡️The Macaronage “Ribbon” Test: Stop folding the moment your batter flows like slow lava or a continuous ribbon. Over-folding is a one-way ticket to flat, hollow shells.
➡️Age Your Whites: For a more concentrated protein structure, let your egg whites “age” in the fridge for 24 hours before use. This reduces moisture while keeping the strength.
➡️The Tap & Pop: After piping, give your tray a firm tap on the counter. Use a toothpick to pop any visible bubbles. This ensures no “trapped air” creates a gap during baking.
➡️Know Your Oven’s “Sweet Spot”: Every oven has a personality. Use an oven thermometer to ensure you aren’t baking too hot (which causes hollows) or too cool (that make the feet not rising up)
