Doing something a little different for snack at Prairie Harvest Christian Life Centre today! Today is the 7-year anniversary of my stroke, so everything here has significance: berries are “brain food”, apple muffins were the first thing I remember making a lot when I finally got home to Yorkton, the chocolate chip cookie recipe I got in the hospital, and chocolate brains (for obvious reasons) on “just white” cupcakes I was served for my 30th birthday in the hospital.

I need your opinion! I did some experimenting in my kitchen today. It was the first time baking felt like a science experiment! I made gluten-free chocolate/vanilla marbled cupcakes four ways - which do you think is best? They all taste the same, the same batter was used for all of them. Do you have a preference?
