Had some left over pie crust from a previous order and royal icing, then bam! Pop tarts were born. Definitely need to try other variations of this, because they’re just f***ing GOOD! 🤯

🍋🥧LEMON MERINGUE PIE🍋🥧

• Homemade flaky pie crust, buttery yet tangy lemon filling, topped with a fluffy French meringue (featuring my 1st attempt at colourful meringue art🤗)

Quick storytime: I remember the day/week we began studying/ creating pies in school and just how damn excited I was to eat🤣 (I’d be lying if I said that wasn’t my reason for joining the class in the first place, tbh😂😩). And let me just be clear… THIS MF WILL HAVE YOU CRYING TEARS OF JOY, seriously. Ever since the very 1st attempts, I have not turned my back on homemade fillings since then. The classics just never seem to fail, especially when they’re MADE FROM SCRATCH😮‍💨❤️ On a side note, I still have yet to learn the tips and tricks from all the legendary kookums and their famous pies, one day hehe 🥰 *sorry for the language, my excitement could not be contained lol*

It’s all a learning process🙌🏼 My first cake I ever decorated 😂 I THINK it’s a strawberry cake w/ cream cheese frosting lol (Made in Grade 9 in my baking/ pastry arts class)

Life is full of lessons and teachings and that’s inevitable. These past few years (especially 2021) have taught me so much about my character as an aspiring pastry chef/ business owner. The reality of making mistakes and pushing through obstacles HIT HARD but, we can’t grow if we’re not CONSISTENTLY challenging ourselves, right?

That’s my mindset towards my goals DAILY, to persevere through life working hard and learning from my experience and the observation of others. Because the truth is that life isn’t stopping, and neither is the time. So, make today count and push yourself to do something TODAY for a better tomorrow!!

{Lesson learnt today: Copy and then PASTE your captions(or loooooong messages) somewhere FIRST before moving onto the next task, forgot to do that and accidentally lost my original text for this post, now I know🙇🏽‍♀️}
