Six rounds of hand-stretching with proper rest between each one ensures our dough develops into a texture unlike other bagel styles. That’s where the creamy chew comes from AKA the brioche-like texture our customers know us for.

Our Tuesdays have looked different over the years.

A few years ago, we were testing in our family kitchen, visiting bagel shops overseas (some better than others) and filming content when nobody knew who we were.

Through every stage, we’ve done this together. A family business with a shared vision and relentless commitment to getting it right.

Today was our first Tuesday open at The Forge but this expansion is just the beginning.

Our coffee syrups are made in-house by our baristas using our very own recipes. ☕️

Brown Sugar. Vanilla. Chai. Simple Syrup. Chocolate. Hazelnut. Caramel.

Each one is made because we believe our Anvil Espresso deserves more than shortcuts. When you order a drink with our syrup, you’re tasting the difference that real ingredients make!

During our travels through Europe, we fell in love with how they used raw honeycomb.

We searched for the right supplier and found Dale Lewis right here in rural Manitoba. With their honeycomb, we’ve been able to turn this idea into a reality for our customers! Fresh honeycomb, straight from the hive.

The Honeycomb Heaven might look simple and that’s the point. The natural sweetness of the honeycomb doesn’t need anything else. It’s wholesome and beautiful in its simplicity.

Honeycomb Heaven is just that - fresh honeycomb cut straight from the hive, spread warm on extra salted butter and served European style on our Sourdough Rye Polishire bagel. This is simplicity done right. The honeycomb’s natural sweetness. The butter’s richness. The bagel’s chew. Nothing else needed.

What’s summer without s’mores?! 🪵Fireside S’more starts with the Honey Graham bagel, Chocolate Espresso w/ Vanilla lift, topped with marshmallow meringue, milk chocolate, graham cracker dust, strawberries, and blackberries.

The Raspberry Whip Iced Lattes come two ways: Our exclusive Anvil espresso or premium matcha, both infused with house-made raspberry syrup and topped with raspberry whip. Espresso finishes with dark chocolate pearls and the Matcha finishes with crisp raspberry topping. 🍵

Who’s ready for August Polishire bagels?! ⬇️

We’re bringing in a Honey Graham bagel with the flavour of a summer staple you know and love — graham cracker! Sweet, nostalgic, with the signature chew you expect from us.

Chocolate Espresso is infused with fresh-pulled Anvil espresso straight from our baristas to our bakers. This is coffee and chocolate in perfect balance.

Cheddar & Chive is infused with sharp, aged cheddar and anchors beautifully with any of our savoury lifts.

All three built to be savoured. Available all August!
