You’ve been asking for breakfast options since our very first day, and for months our team has tested, refined, and perfected a breakfast menu that matches the care we put into every Polishire bagel.

Avocado Sunrise: High quality Hass avocado, topped with a large egg, bright crumbled feta, fresh radish and microgreens, finished with crispy onions. This take on avocado toast is layered, flavourful, and satisfying in ways you’ve might’ve never tried.

J.B. Rooster: This one is for everyone who’s been waiting for a proper breakfast sandwich. Your choice of thick-cut side bacon or centre-cut peameal, layered with a large egg, ripe tomato, aged old cheddar, fresh dill, green onion, and finished with a bold pesto aioli. Every ingredient was chosen with the intention to fuel your day.

Polishire BLTB: The BLT reimagined on our hand-stretched Polishire bagel. Thick-cut side bacon, fresh sliced tomato, crisp romaine lettuce, and house-made spicy aioli.

Pair any of these with our Shaken Espresso - our exclusive Anvil espresso shaken over ice, with our house-made brown sugar syrup, and your milk of choice.

Summer has arrived at The Forge, and our June flavour lineup is here to match the season! 🔥

Our new Raspberry Rhubarb Polishire bagel is made with fresh raspberries and rhubarb for a tart flavour that is naturally sweet. It’s light, fruity, and unmistakably summer in every bite.

The Italian is a savoury flavour profile that brings the warmth of a European summer to the bench. An Italian herb medley worked into the dough alongside olive oil, and Parmigiano Reggiano.

Our lift offering for June is Sundried Tomato with Parmesan. 🍅 A rich tomato flavour with a bold, salty finish from shaved Parmesan. It pairs beautifully across our menu, but we especially recommend it on the Italian for a fully European experience.

Ready for you to enjoy starting this Wednesday, June 3rd!

When we opened the doors at The Forge, we knew we were building something unique but what we couldn’t have predicted, was the incredible support from all of you.

To our community, thank you. Thank you for lining up in the cold, for driving across the city, and for making The Forge a part of your week. Every visit has meant more to us than words can express.

To our staff, your commitment and the smiles you bring behind that counter every morning are woven into everything we do here. We are so proud of each of you.

Building something real takes a community willing to believe in what you’re making, and a team willing to show up and give it everything. We have both and we don’t take that granted.

Perfecting a recipe as iconic as the Carrot Cake was no simple feat. It starts with roasting and puréeing fresh carrots, chopped walnuts, and our own blend of warm spices — the same ingredients you’d find in your grandmother’s cabinet, transformed through the Polishire method into something entirely its own.

Every stage of the Polishire method contributes to our signature creamy chew and infused flavour. The six rounds of Poke & Stretch, the slow rise in-between, the bake until golden brown.

Long before we officially opened our doors, we knew we needed to go straight to the source. 🗺️

We decided to spend time in beigel (and bajgiel) shops across England and Poland — the kind of shops that span generations. We wanted to learn everything we could about ingredients, quality, equipment, how they served customers, how they displayed their craft. All of it.

Coming back home and putting those pieces together was just the beginning, the real work started when we opened our doors.

Now when we read Google reviews that say “The atmosphere is totally European and alive,” we know the research mattered and the extra effort was worth it. This is what it took to bring something meaningful here to Winnipeg.

Every product we make whether it’s Polishire bagels, lifts and now the Cabin Pack goes through rounds and rounds of refinement before it reaches you. We test for depth of flavour, texture in each bite, sweetness, chew and we don’t stop until it’s ready. This Cabin Pack was different from our usual work, but was held to the same standard. 🔥
