Some Chomp lore for y'all.
When I first started making recipes, this cookie was called "Skorsalot" and didn't have any Biscoff in it. It quickly became a body builder favourite in the community and sold out fast at body building shows.
One particular body builder, Mike Mayo (RIP) always bought a TON of them as his son was a huge fan.
When Mike passed away, I worked with his widow on a cookie that would be at his memorial. We called it "the Mike mayo" to pay tribute to the amazing dude he was, and I kept that cookie on the menu. I later changed the name so that folks stopped asking me if it had mayo in it 😂😂 but this recipe has been around for 4 years.
So! If you love the Biscoff crunch, you can thank Cindy Stibbard for helping me design such an awesome flavour, and raise a glass to Mike, who was one amazing dude and an equally amazing body builder.
