This past weekend was wild, and Saturday was on an entirely different level 😝. When orders kept pouring in, I'll admit, I got anxious. Never had I produced so many boxes in one day.

It was draining, but so worth it. 😩 Right after the chaos, I had to pack up my life and get ready for my trip to Montreal, all just three days after my last sale!

Huge thank you to everyone for the support 🙏. To those who tried my final tasting box in Calgary, I hope you loved it 😊. Your feedback means everything as I get ready to re-launch in Quebec - don't hesitate to share your thoughts!

Wow, thank you so much from the bottom of my heart. Your support means everything. As my chapter in Calgary comes to a close, it feels incredibly special to finish on such a meaningful note, and I’m truly grateful for the trust you’ve given me.

I’m still amazed that so many of you pre-ordered even before the pastries were revealed. That kind of belief in my work means more than I can say 🥺 I can’t wait for those of you who ordered to enjoy my very last tasting box in Calgary. ❤️

It will soon be time to say goodbye ❤️�
It is with great sadness that I announce I will be ceasing my operations in Calgary after December 7th. As my goals have evolved and I’ve decided to take this project further, towards opening a physical store, I will be leaving Calgary and returning to Québec.�
Life has been a rollercoaster, and I’m endlessly grateful that you gave me the opportunity to bake for you and grow through this journey. Thank you for trusting a small home baker when I was just starting out. Your kind words, your support, and your repeat orders have meant more than you know. They’ve given me the confidence to keep pushing this dream forward.�

As many of you have noticed, I’m no longer taking new cake orders so I can focus on my current commitments and on creating my final Holiday tasting box. I’ve been pouring my heart into it. Depending on timing, I may have a limited cake available, but I can’t promise yet.

If you’ve loved my pastries, or if you’ve been meaning to try them but haven’t taken the leap, this will be your very last chance. My final tasting box will be available ONLY from Friday, December 5th to Sunday, December 7th, and in limited quantities.

Meet my modern Saint-Honoré 😍 — crisp, flaky layers of housemade puff pastry with a subtle insert of silky salted caramel crémeux made with fragrant acacia honey, all wrapped in vanilla bean brown butter mascarpone cream. Airy Chantilly and choux au craquelin crown the top, each filled with the same velvety cream. Delicately sweet, buttery, and irresistibly smooth.

🍎 A royal twist on a fairground favourite, brimming with autumn magic. Two layers of golden Honeycrisp apple fritters cradle a luscious brown butter mascarpone cream atop an almond sablé 🤤 Lightly sugared, cinnamon-dusted apple slices add a gentle warmth and spice to every bite. Bursting with orchard flavours, this pastry is rich, buttery, and delightfully nostalgic—a true seasonal indulgence 🍂

I first made these apple fritters last winter… and wow, they’re addictive. I couldn’t stop at just one! For the tasting box, the fritters are served chilled rather than hot, but the cream makes every bite soft, rich, and utterly satisfying.

Full disclosure: I’m not a huge cinnamon fan 😅, so it’s subtle here—but feel free to sprinkle on extra if you love it.

After many trials (and a lot of tasting 😉), I’m so happy to share the new version of my Kōmyō Matcha–Chocolat cake — now reborn as Kōmyō Matcha–Yuzu Chocolat.

This new version combines a light matcha mascarpone mousse with layers of bright yuzu crémeux, silky Belgian milk chocolate ganache, soft matcha sponge, and a crisp matcha crunch.

It’s wrapped in Belgian milk chocolate, finished with a Belgian white chocolate collar and handcrafted Belgian white chocolate flowers.
The result? A more complex yet lighter balance of matcha, chocolate, and citrus — comforting and intriguing at once. 🍃✨

This one’s inspired by a childhood favourite: peanut butter and banana on toast. Honestly, I’ve never been a huge peanut butter fan, and bananas are just… okay 😅. But caramelizing the banana and pairing it with tangy passion fruit brings the flavours to life—it adds a fresh, lively twist that makes it unexpectedly fun 😋 Add milk chocolate and my homemade peanut butter, and suddenly it’s familiar but fancy—like your favourite comfort food dressed up for a party 🎉.
