The legend of the Madeleine

1755, a château in Commercy, France. The Duke of Lorraine's pastry chef quit mid-banquet after a kitchen argument. A young servant named Madeleine stepped in, pulled out her grandmother's recipe, and saved the dessert course with a small buttery sponge cake baked in a shell mold. The Duke loved them so much he named them after her.

Fast forward to 1913: Proust wrote about eating one dipped in tea and it became one of the most famous passages in French literature. Not bad for a two-bite cake.
