Day 5 of making candied mixed peel. I could boil it one more time but I'm happy with the results. The peel is soft and transparent. Next it will get added to my fruits that are soaking, it will soak in rum and wine for several months before getting ground up and soaked some more.

Day 1 of making homemade mixed peel. This is a 5 to 7 day process. This batch is mostly lemon peel, I'll do a batch with orange peel in the new year. I only use quality ingredients and sometimes that means I have to make it from scratch. There are no chemical, artifical colours or ingredients in any of my products.
