Clarke's Bread is made with 100% local organic flours, water and sea salt. We use a traditional sourdough method with a long fermentation time, to help with digestibility. All of our breads are hand shaped, and hearth baked on a scorching hot stone. We bake our breads dark. This colouring is the caramelization of the natural sugars brought out by the fermentation process. You will have a hard time

Well folks. This here may just look like a regular loaf of bread. But it's special. In a sad and happy way at the same time. This loaf is the last loaf baked by us here at "Clarke's Bread". I learned more about myself this year than I likely have in all my other years on this earth. While business has been growing steadily month after month here; I had a few instances of late that woke me up to the reality that "Clarke's Bread" would not be able to sustain the quality and integrity of the product if growth continued. This is very important to me and I found myself sacrificing my time to maintain a standard I was happy with. While standards are important, ultimately my happiness is more important to me. I will be taking some time off to reflect and plan out a business that is fulfilling and balanced. .
I want to take a minute to thank everyone that has supported us over this short and sweet past year. I want to thank everyone that took a chance on me, and a special thanks to rock star baker Tristan Maclean. Its been an amazing ride. Thank you.

Sometimes it feels like life is flying by faster every time that I blink. One year ago this weekend was the VERY FIRST weekend that Clarke's Bread made its debut at a farmers market in downtown Toronto. It seems crazy to me that a year has gone by already.

While this day is monumental, it was actually just a strange coincidence that this beautiful piece was unveiled!

"The 3 Spoons" is a blog run by newlyweds and and their good friend .

I can't say enough amazing things about them to justify such a glowing article. The amount of effort they put into their work is admirable. They are amazing humans who are changing the game when it comes to blogging. Well written articles, by people who have done their research with a fine magnifing glass, accompanied by photos that bring their subjects to life.

*DISCLAIMER* since the article was written, I have made the hard choice to change the mixture of flour to incorporate about 40% Organic Hard white flour that is NOT from Ontario. This was a real moral problem for me, but it was essential for sustaining the quality and consistency of the bread.

Big thanks to "The 3 Spoons" crew. I also want to thank Mr Hayhoe for his incredible flours which none of this would be possible without. I also want to thank who plays a gigantic role in all aspects of Clarke's Bread.
