I'm celebrating Easter and this beautiful spring weather with some coconut cream pies: shortbread pie crust, coconut custard, chantilly cream and caramelized toasted coconut.

Packing is hard work -but it's made easier when the house is filled with the smell of fresh banana coconut bread.

And to keep in theme, I also made cheddar jalapeño cornbread. Next time, I'll leave the seeds of the jalapeños in, as it wasn't as spicy as I expected. But still super delicious, especially with some butter.
