FRENCH SPRING VEGETABLE SOUP
Adapted from Twelve Months of Monastery Soups. Spring is coming. Really!
Ingredients: butter, celeriac, garlic, cauliflower, peas, carrots, spinach, leeks, kale/swiss chard, white wine, tomatoes, parsley, thyme, sea salt, black pepper.
Vegetarian/gluten Free. Not spicy.

SOUP #2
BRAZILIAN BLACK BEAN SOUP
Another Bolo favourite. Adapted from The Moosewood Cookbook.
Ingredients: olive oil, onion, garlic, bell pepper, celery, carrots, tomatoes, black beans, kale, orange juice, cumin, cayenne, sea salt, black pepper, coriander.
Vegan/gluten free. A touch of spice from the cayenne.

SOUP # 3
ROASTED RED PEPPER AND GARLIC SOUPAdapted from Zuppa Soupa. A recipe by Francine Deschepper. A middle eastern inspired soup by way of Halifax.
Ingredients: olive oil, onions, garlic (lots), red peppers, lemon, sea salt, pepper.
Vegan/gluten free.

SOUP # 4
CURRIED CHICKPEA SOUP
Adapted from Rebar modernfoodcookbook by Audrey Alsterberg & Wanda Urbanowicz. A spicy, north Indian dish.
Ingredients: safflower oil, onion, bay leaves, garlic, ginger, jalapeno peppers, red pepper, tomatoes, cumin, coriander, paprika, garam masala, black pepper, turmeric, chick peas, mango chutney, coconut milk, cilantro, sea salt.
Vegan/gluten free.

MOOSEWOOD GYPSY SOUP
A Bolo favourite. Adapted from The Moosewood Cookbook by Mollie Katzen.
Ingredients: olive oil, onions, garlic, sweet potatoes, celery, tomatoes, paprika, turmeric, peppers, basil, sea salt, cayenne, tamari, lemon, cinnamon, chickpeas, bay leaf.
Vegan/gluten Free. Just a bit spicy.

SOUP #2
CREAM OF CARROT WITH GINGER
Adapted from The Best Soups in the World by Clifford A. Wright.
Orange carrots were first cultivated in Holland in the 1600's. They are simply delicious in a modern pairing with ginger in this creamed soup.
Ingredients: butter, onions, carrots, ginger, milk, cream, sea salt, black pepper.
Vegetarian/gluten free. Not spicy.

FRESH TOMATO SOUP PROVENCAL
Adapted from The Lighthearted Cookbook by Anne Lindsay.
"Fresh herbs add a delightful flavour to this soup."
Ingredients: garlic, onions, tomatoes, tomato paste, fresh parsley, fresh basil, fresh thyme, sea salt, pepper.

Adapted from Ste. Anne's Spa Cookbook. Another classic Italian soup.
Ingredients: olive oil, onion, garlic, bell pepper, celery, zucchini, kale/chard, tomatoes, pinto beans, farfalle pasta, oregano, sea salt, black pepper.
Vegan. Not spicy.

SOUP #2
RED LENTIL & CARROT WITH COCONUT
A favourite at the Farmer's Markets, this is one of Bolo's best selling soups.
Ingredients: olive oil, red lentils, onions, garlic, turmeric, cumin, chili flakes, curry powder, tomatos, carrots, kale, lemon juice, coconut milk, sea salt, pepper.
Vegan/gluten free. This one is spicy.

SOUP # 3
WILD RICE AND MUSHROOM
Adapted from The Best Soups in the World cookbook. The recipe comes from Saint-Henri-de-Levis in rural Quebec. "A full flavoured soup that leaves you feeling light and nourished."
Ingredients: butter, onion, carrot, leek, celery, mix of mushrooms, sherry, parsley, tarragon, wild rice, sea salt, black pepper.
Vegetarian/gluten free. Not spicy.

Ingredients: olive oil, onion, celery, green pepper, carrot, garlic, vinegar, mix of herbs, tomato paste, tomatoes, tomato juice, spinach, sea salt, pepper.
Vegetarian/gluten free. Not spicy.

SOUP #2
THAI RED CURRY LENTILS WITH SWEET POTATOES & GREENS.
Adapted from NY Times Cooking. A Bolo favourite.
Ingredients: olive oil, onions, garlic, squash, cumin, coriander, red pepper flakes, red lentils, fresh thyme, tahini, lemon, sea salt, pepper.
Vegan/gluten free. Moderately spicy.

Ingredients: beets, carrots, potatoes, leeks, cabbage, mushrooms, onion, tomatoes, olive oil, cream, sea salt, pepper, parsley.
Vegetarian/gluten free.

SOUP #2

Not sure where this recipe came from but this soup is wonderful. Hearty, creamy and satisfying.

GREEN GODDESS IMMUNE BOOSTING SOUP.
Adapted from Great Island. "Vibrant and nourishing!"
Ingredients: greens blend, garlic, ginger, cayenne, turmeric, veggie broth, coconut milk, sea salt, lemon/lime juice, black pepper, broccoli, chia seeds.
Vegan/gluten free.

SOUP # 3
WEST AFRICAN PEANUT.
Adapted from Zuppa Suppa - Satisfaction Feast Restaurant.
Ingredients: onion, olive oil, ginger, cayenne, carrots, sweet potato, tomato, peanut butter, maple syrup, lemon juice, sea salt.

Dear Friends and customers of Bolo soup,

For those of you who don't know, our beloved soup maker Greg Barsoski has recently been diagnosed with Acute Myeloid Leukemia and is currently in the hospital undergoing treatment.

The doctors recommended a newer and milder form of chemotherapy for him due to his age and condition due to his age and condition. However this form of chemotherapy is not covered by OHIP and comes at a considerable cost. The cost of the chemotherapy on top of the lost income has put considerable financial strain on the rest of his family.

If you are a fan of Greg and his soups and are in a position to help financially, any sort of donation is greatly appreciated.

Dear friends and customers of Bolo Soup,

Hi Here is the Bolo Soup Home Delivery Menu for the week of March 1 to March 8.

SOUPS:

SOUP #1
PORTUGUESE STYLE BUTTERNUT SQUASH SOUP
Comfort food from Portugal. Great with sourdough! Recipe courtesy of chef Joe V.
Ingredients: olive oil, onions, garlic, butternut squash, potato, carrot, thyme, fresh ginger, sea salt, pepper.
Vegan/gluten free.

SOUP #2
SPLIT PEA, BEAN & BARLEY SOUP.
Adapted from The Lighthearted Cookbook. "A light yet warming meal."
Ingredients: olive oil, onions, split peas, lima beans, barley, bay leaf, celery seeds, potato, carrot, celery, basil, thyme, sea salt, pepper.
Vegan/gluten free.

SOUP # 3
RED LENTIL & CARROT WITH COCONUT.
A favourite at the Farmer's Markets, this is one of Bolo's first soups.
Ingredients: olive oil, red lentils, onions, garlic, turmeric, cumin, chili flakes, tomatos, carrots, kale, lemon juice, coconut milk, sea salt, pepper.
Vegan/gluten free.

ORDERING:

All delivery orders must be placed by 9:00 am this coming Monday.

Payment can be via Mastercard or Visa, or if paying cash, place it in an envelope with the amount written in the corner and leave it for our driver to collect.

We have resumed giving $1 credit for wide-mouth Bolo soup jars.

HOME DELIVERY:

Bolo delivers to East of Yonge on Tuesday. Please note that we are not currently taking orders West of Yonge.

We deliver from 12-8 pm.

Bolo’s fresh made soups are delivered on ice. Please leave a cooler or zippered bag at your front door to place your orders and protect from the critters scurrying for last minute tasties. Our soups last 7-8 days if kept in the fridge and freeze well. Bread will keep for 3 to 4 days and also freezes well.

Welcome everyone to a New Year as we continue our Covid Journey. I hope your Holidays went well and good health abounds in your lives.

Soup #1
RIBOLLITA-Tuscan Bean Soup.
This famous soup is a fixture on every Tuscan Trattoria menu.
Ingredients: Cannellini beans, olive oil, garlic cloves, fresh sage leaves, sea salt and freshly ground pepper, yellow onions, carrots, celery, potatoes, swiss chard, kale, green cabbage, tomatoes, bay leaves.
VEGAN, GLUTEN FREE.

Soup #2
CLASSIC RED LENTIL SOUP.
Creamy, delicate, but substantial soup.
Ingredients: onions, red lentils, sea salt, pepper, tomato, garlic, carrot, celery, potato, chickpeas, leeks, cumin, paprika, cardamom, turmeric, cinnamon, mint, cilantro, parsley, lemon.
VEGAN, GLUTEN FREE.

Soup #3
COCONUT CURRY CHICKPEAS WITH PUMPKIN AND LIME
It’s a rich creamy curry that you can eat on your own or serve over rice or couscous.
Ingredients: onion, bay leaf, ginger, garlic, garam masala, cumin, turmeric, chickpeas, coconut milk, pumpkin puree, sea salt, cilantro, lime juice, spinach, kale.
VEGAN, GLUTEN FREE.

Soup #4
VEGAN ITALIAN WEDDING SOUP.
Warm up on a chilly nite with a bowl of this Vegan Italian Wedding Soup. It’s brimming with veggies, pasta pearls, and savoury vegan meatballs.
Ingredients: vegan meatballs, olive oil, onion, carrots, celery, garlic, thyme, bay leaves, acini de pepe pasta, sea salt, black pepper, kale. Spinach.
VEGAN.

Soup #5
PROVENCIAL GREENS SOUP
Add thick slices of country bread, toasted and rubbed with a cut of garlic and you have an awesome soup.
Ingredients: olive oil, leeks, garlic , sea salt, swiss chard, dandelion greens, watercress, black pepper, parmesan rind.
Vegetarian.

VERY IMPORTANT: All delivery orders must be recorded through our website and placed by 9:00 am this coming Monday, January 18.
