SOUPS:
SOUP #1
FRENCH SPRING VEGETABLE SOUP
Adapted from Twelve Months of Monastery Soups. Spring is coming. Really!
Ingredients: butter, celeriac, garlic, cauliflower, peas, carrots, spinach, leeks, kale/swiss chard, white wine, tomatoes, parsley, thyme, sea salt, black pepper.
Vegetarian/gluten Free. Not spicy.
SOUP #2
BRAZILIAN BLACK BEAN SOUP
Another Bolo favourite. Adapted from The Moosewood Cookbook.
Ingredients: olive oil, onion, garlic, bell pepper, celery, carrots, tomatoes, black beans, kale, orange juice, cumin, cayenne, sea salt, black pepper, coriander.
Vegan/gluten free. A touch of spice from the cayenne.
SOUP # 3
ROASTED RED PEPPER AND GARLIC SOUPAdapted from Zuppa Soupa. A recipe by Francine Deschepper. A middle eastern inspired soup by way of Halifax.
Ingredients: olive oil, onions, garlic (lots), red peppers, lemon, sea salt, pepper.
Vegan/gluten free.
SOUP # 4
CURRIED CHICKPEA SOUP
Adapted from Rebar modernfoodcookbook by Audrey Alsterberg & Wanda Urbanowicz. A spicy, north Indian dish.
Ingredients: safflower oil, onion, bay leaves, garlic, ginger, jalapeno peppers, red pepper, tomatoes, cumin, coriander, paprika, garam masala, black pepper, turmeric, chick peas, mango chutney, coconut milk, cilantro, sea salt.
Vegan/gluten free.

All delivery orders must be placed by 9:00 am this coming Monday.

Payment can be via Mastercard or Visa, or if paying cash, place it in an envelope with the amount written in the corner and leave it for our driver to collect.
We have resumed giving $1 credit for wide-mouth Bolo soup jars.
HOME DELIVERY:
Bolo delivers to East of Yonge on Tuesday from the lake to the 401 and east to Birchcliffe. Please note that we are not currently taking orders West of Yonge.
We deliver from 12-8 pm.
Bolo’s fresh made soups are delivered on ice. Please leave a cooler or zippered bag at your front door to place your orders and protect from the critters scurrying for last minute tasties. Our soups last 7-8 days if kept in the fridge and freeze well. Bread will keep for 3 to 4 days and also freezes well.
