Cannelé is a small French pastry from Bordeaux, known for its thin, caramelized crust and soft, custard-like center, typically flavored with rum and vanilla. It’s minimal, elegant, and notoriously difficult to perfect.
At Castle & Coal, we’ve gone through extensive trial and error to achieve that delicate balance - an even, crisp crust with a tender interior that allows the flavors to shine.
We don’t offer additional flavors or toppings for our cannelés. Instead, we take pride in showcasing their simplicity and in perfecting this classic, deceptively challenging French pastry in its purest form.
Learn how to make and bake one of the hardest French pastry. From start to finish, we will be demonstrating how we intricately make our cannelés at Castle & Coal.
The workshop will take 2 hours and will include 1 unseasoned tin lined copper mould (worth $55), a block of beeswax, recipes, full demonstration of making cannelés, making a batch of your own to take home, tips and tricks of what to do at home when making/ baking.
FAQ: Can I just go to the workshop and not include the mould?
All workshops include all of the above, no price modifications.
