Dairy Free Frittata
This easy frittata dish will be a hit at your next brunch!
What you’ll need:
• 3 links of breakfast sausage
• ½ cup of kabocha squash
• ½ onion
• ½ red pepper
• 8 eggs
• 1 cup of spinach
• S&P
Let’s put it together!
• Cube squash and roast squash for 30 minutes, set aside
• Saute breakfast sausage, onions and peppers, set aside
• Whisk together 8 eggs
• Oil a pie pan (or whatever you’re baking it in)
• Put the squash, breakfast sausage, onions, peppers in the pan, toss with salt and pepper
• Top with spinach
• Pour the egg over top and shimmy the pan so that it covers everything
• Bake in the over at 350°F for 45 minutes or until everything sets
• Can be served hot or cold
