I baked my pecan butter tart squares this morning & thought I’d share a little background on this one. I’ve always loved the shortbread crust of butter tarts, but my personal preference was for more flaky crust, but slightly less buttery caramel centre. Also, many of the recipes online asked for corn syrup…so challenge accepted. And after several rounds of tweaking, I came across my final recipe with the proportions I was seeking. A thick shortbread crust with a rich caramel filling made with butter and brown sugar, with no corn syrup.
