Winter is finally over! That little fact has given me a boost of energy and several ideas. I have been baking up a storm and hitting the gym harder to counteract the effects. Lady luck (or maybe pure genius) has been on my side. The new recipes have yielded wonderful results. But I will let you be the judge of that.
I have been asked questions on the ingredients since some of my friends are allergic to eggs or are vegetarian. Good news! I can substitute eggs with yogurt. It works all very well and dos not alter the taste or texture of the cakes.
A friend of mine recommended I made the goodies pictures more visually appealing. I took her advice to heart and changed the angles, added accessories and visual aids. With some minimal editing, I achieved lovely pictures. Let me know what you think.
And this colleague of mine told me how he was hankering for an upside-down apple cake. After some research, I came upon this recipe and tried it out. Beautiful cake. Not too tart and perfectly moist. If apples aren’t your favorite, any fruit can be used. This cake will be part of the permanent menu.
With the month of April comes two things, taxes and Easter. I am a huge fan of Easter. Taxes, not so much 😊. I usually like to host an Easter brunch with my favorite friends. I cook and bake as many desserts as possible. We end up feeling full and happy. Then singing some karaoke. It is a good time. For Easter, I am proposing a luscious coconut cake – light and full of coconut flavor. Not overly sweet. Pretty and delicious. And of course, the upside-down apple cake. Both cakes are priced at $44.
