Another season of preserving the harvest is here! We got some lovely forced rhubarb from our neighbour, farmer Rick, this year that made the prettiest pink jam, with elderflowers picked from my garden and a little splash of St. Germain! Forced rhubarb is a specialty item, where the rhubarb is covered in the dark to stop it from producing chlorophyll, using the sugars stored in its roots from over the winter. A beautifully cream and pink stock grows in this environment, that is more delicate in flavour and incredibly tender! For this year, we will only have one batch of this limited edition forced rhubarb and elderflower jam, but hopefully next year we will have plenty to spare! Also experimenting with greenhouse grown green tomatoes for some early batches of chow to keep us stocked with local chow as we can’t produce enough in the short fall season to fill the demand! Local Stokdijk green tomatoes and NS onions! Delicious local tradition that we are happy to continue on!
