If you’ve been wondering where I’ve been… I’m still here.

The last few months have been a whirlwind, and I had to press pause on baking while life shifted around me. With some new adventures ahead (including going back to school and having the kids home this summer), I’ve been taking some time to reassess what Croil looks like in this season of life.

This little bakery has been such a special part of my journey, and I’m so grateful for every order, message, and bit of support along the way.

I don’t know exactly when I’ll be baking again or what the next chapter will look like, but Croil isn’t disappearing. I’m taking the time to figure out what feels right moving forward.

Our everyday loaf, naturally fermented with only flour, water, and salt. Crisp crust, airy interior, endlessly versatile for breakfast toast, sandwiches, soups, dinner boards, dips, or simply warm with butter.

Spring Pairing:
Whipped ricotta, fresh strawberries, hot honey, and cracked black pepper on toasted slices. 🍓

Roasted Garlic & Rosemary Boule

Slow-roasted garlic folded into a 24-hour fermented sourdough with a gentle touch of rosemary for warmth and depth, savoury, aromatic, and made for spring dinners and cozy grazing boards.

Spring Pairing:
Serve alongside lemony whipped goat cheese, grilled asparagus, olive oil, and a chilled glass of crisp white wine. 🌿

Cranberry Orange Scones

Buttery sourdough scones bursting with bright orange zest and tart cranberries, finished with a dusting of icing sugar for the perfect sweet spring bite.

Plot twist… I’m baking Monday 👀

My schedule opened up, so we’re shifting things slightly this week. If you’re in dire need of a weekend loaf, message me, I’ll always try to make bread magic happen. Otherwise, fresh bakes will be ready Monday, delivered in Trout Creek or available for pickup just outside the neighbourhood.

🥖 Rustic Boule (always here, always perfect)
That golden crust, that soft, airy inside—she’s dependable for a reason.

Think fresh butter, flaky sea salt, and sliced radishes or herbs.

🌿 NEW: Sea Salt & Rosemary Focaccia (9x11)
Crispy edges, pillowy center, finished with fragrant rosemary and flaky sea salt.

How to eat it:
Breakfast: eggs + olive oil
Lunch: stacked into a sandwich
Dinner: drag through something saucy

🍫 Toasted Coconut + Dark Chocolate Scone
Crunchy toasted coconut, rich dark chocolate, a whisper of almond… finished with a drizzle of chocolate and more golden coconut on top. Soft in the middle, lightly crisp on the edges—exactly how a scone should be.

Coffee pairing:
A creamy latte or coconut milk cappuccino takes this somewhere borderline inappropriate (in the best way).

I’m back in the kitchen 🌷

I’ve been in my 90s era lately…
slow mornings, baking, and yes—fully invested in the love story of John F. Kennedy Jr. like it’s breaking news again.

Somewhere between that and real life, I said I’d post a menu… and then quietly disappeared 🙃

But honestly? I needed a minute. And now I’m back in the kitchen, doing what I love just a little slower, a little more intentional.

So this weekend, I’m keeping it simple, cozy, and (very on theme) timeless.

Honey Whole Wheat – $12
A blend of white and whole wheat flour with a touch of honey. Makes the best crispy toast—nutty, soft inside, golden outside.

Lemon Blueberry Scones (4) – $12
Bright, fresh, and just sweet enough—soft, buttery, and full of spring energy dusted with a little icing.
