I make all of the botanicals for my cakes from edible materials. My preferred mediums are gumpaste and wafer paper. It’s really a very therapeutic process, challenging myself to make the blooms as lifelike as possible, petal by petal.

Daniel and Megan came to me with their invitation and the bridal bouquet as inspiration. With their wedding reception being held at the Royal Botanical Gardens I leaned into the charm of nature with the sugar flowers, and the wafer paper blossoms appliqué. Wafer paper lace tulle added a delicate texture and a nod to Megan’s wedding gown.

What I LOVE to create - full of romantic charm wedding cakes, filled with detail, often incorporating sugar flowers, gumpaste and wafer paper. My style varies vastly and I tend to fluctuate from rococo influences to modern lines, but the first thought is always how romantic!
