That incredibly light, cottony, and "feather-like" texture is a hallmark of highly developed, carefully rested dough. By kneading, allowing it to rest and proof in between, and using the right techniques, you develop the dough's gluten structure into a fine, delicate web that traps air beautifully.

The aroma is exceptionally pleasant. It will be dehydrated in the oven overnight.
