I came back and my sourdough decided to humble me. This week’s loaves came out significantly smaller than usual, but they’re still just as delicious.

Sometimes I miss baking one loaf at home in my oven. 🤍

There’s something so predictable about making one loaf versus making 60 at a time. Lately, I’ve been struggling with consistency. The hall oven is older, the convection fan isn’t working like it once did, and some days my loaves just don’t come out the way I know they can.

And if I’m being truthful, it can be really depleting.

I started baking sourdough because I genuinely loved it. There was something so satisfying about pulling a beautiful loaf out of my own oven. Scaling that passion into baking dozens and dozens of loaves every week has been an entirely different learning experience.

But then I bake one loaf at home and pull this out of the oven… and I remember exactly why I fell in love with sourdough in the first place. 🤎

I’ve already baked 60 loaves at a time, but I’m still learning, adjusting, and figuring out how to bring the same consistency and care to every loaf.
