When visiting Circling Hawk, keep an eye out for our two resident farm dogs! They spend most of their days wandering the property, soaking up the sun, and keeping an eye on farm life.

Both of our dogs are friendly and love greeting visitors, but we ask that you check in with a staff member before petting them. As a gentle reminder for all guests, outside dogs and pets are not permitted on the property. This rule helps keep our resident dogs, our farm animals, and our visitors safe and comfortable during their visit. 🐕🐝

At Circling Hawk, we get phone calls once or twice a month from folks who spot a cluster of bees on their property and aren't sure what to do next. We are always happy to help protect our local pollinators, but the right response depends on where the insects are resting and what kind of visitors you actually have.

If you find a honeybee swarm clustered out in the open—such as on a tree branch, a bush, or a fence line on your property—we will come out and safely remove them free of charge.

However, if the honeybees have already moved into a structural space, such as inside your walls, chimney, or shed, special equipment and structural repairs are required that fall outside of what we can handle. Similarly, if your uninvited guests turn out to be wasps or hornets rather than honeybees, we are unable to assist. In those specific situations, your best course of action is to contact a local, licensed pest control company that has the tools to safely address structural infestations or aggressive stinging pests.

Properly storing mead ensures every bottle ages smoothly and maintains its complex honey profile over time.

Keeping your mead in a cool, dark place with a consistent temperature is essential. Fluctuating heat speeds up oxidation, while UV light breaks down key flavour compounds over time. Storing your bottles in a dark pantry, closet, or w**e cellar protects them from these elements.

How you orient your bottle depends on the type of closure used. Natural corks require bottles to be stored on their side so the liquid keeps the cork moist. If a natural cork dries out, oxygen enters the bottle, but natural cork is ideal for long-term cellaring beyond five years. In contrast, synthetic corks do not shrink or dry out, so bottles can be stored upright or sideways. Synthetic corks provide a tighter seal best suited for short- to medium-term aging up to three years.

Once opened, simply recork your bottle, store it upright in the refrigerator, and enjoy it within two to three weeks for optimal flavour. 🍻🍯

Due to circumstances beyond our control, we have made the difficult decision to postpone our Medieval Mead Fest, originally planned for October 3rd. We are now planning to gather and celebrate on May 15th, 2027.

All other details about the event will remain exactly the same—including our fantastic line-up of demonstrators, themed vendors, and music. Thank you so much for your understanding, patience, and continued support. We can't wait to raise a horn of mead with you in the spring!

It’s been a great week for the harvest! Beyond gathering a batch of sweet pears right at their peak, we also brought in a fresh haul of apples. All of this crisp, seasonal fruit is setting the stage for something special as we prep the ingredients for a brand-new mead batch coming down the pipeline soon. On our farm property, you will quickly notice our honey bees aren't the only ones hard at work. Visitors often spot large bees burrowing into the wood above our shop. These are carpenter bees, and while they closely resemble bumblebees, telling them apart is quite easy.

The simplest giveaway is the abdomen. A bumblebee is fuzzy all over, with yellow-and-black hair covering its entire body. A carpenter bee has a smooth bare black abdomen that reflects light like glass.

Their nesting habits are also completely different. Bumblebees are social insects that live together in underground colonies. Carpenter bees are solitary builders that carve neat tunnels into unpainted wood. Keep an eye out for these shiny-backed woodworkers on your next visit!
