Friday night dessert was a winner! 🍓✨

Strawberry rhubarb upside-down cake topped with homemade vanilla bean whipped cream. I was so pleased with how tender and soft the sponge turned out—it soaked up all those sweet-tart strawberry and rhubarb juices beautifully. This recipe is definitely going into the regular rotation, changing with whatever fruit is in season.

Fun fact: Did you know upside-down cakes first became popular in the 1920s, thanks to canned pineapple, and enjoyed another surge in popularity during the 1950s? While pineapple is the classic, I think strawberry rhubarb gives it a delicious prairie twist!

I was asked to make a chocolate peanut butter cheesecake for a birthday celebration, and I think it turned out pretty amazing! 🤎🥜

Rich chocolate brownie base, creamy peanut butter cheesecake, silky chocolate ganache, and a mountain of chopped peanut butter cups… because there’s no such thing as too much chocolate and peanut butter! 🎂

I hope every bite was as delicious as it looks!

Cookies meet cheesecake! 🍋🍮

This week’s experiment combined two favourite desserts into one decadent treat. One topped with bright, tangy lemon curd and fresh raspberries, the other with salted caramel swirled into a creamy cheesecake topping.

The verdict? The lemon was perfection—fresh, balanced, and not overly sweet. The salted caramel version was delicious, but a little too sweet for my taste. If I had to choose, lemon wins this round! What’s your pick??

Kitchen sink cookies are the grandson’s favourite — and the name definitely fits. Loaded with pretzels, chocolate chips, potato chips, and mini M&M’s, they’re the perfect sweet-and-salty combo. The oatmeal gives them the best chewy texture.
