I love this time of year, especially for the food!

This is my homemade mix for mince pie filling: raisins, currants, Demerara sugar, tart apple, orange juice and mixed peel.

Let it sit and marinade for as long as you want. It may not look like much but it smells divine and it will taste delicious when surrounded by pastry (like most things!)

The next bake day is 23rd December - pick up at Coho Commissary in Lower Gibsons or free local delivery.

I'll be making mince pies, shortbread, sticky toffee pudding (10") and cinnamon buns (without frosting)!

The cinnamon buns are a new addition - tried them at home and they were so good - soft, pillowy and not too sweet. Perfect for a Christmas breakfast.

Mmm… teacakes. So delicious when toasted and topped with melty butter. I made this batch yesterday and had one for breakfast but I don’t think they will be around for long!

Throughout November and December, I have all you need for your seasonal gatherings!

Mince pies: using homemade short crust pastry and filled with homemade mincemeat using dried fruit, spices and brown sugar. The mince pies can be made vegan upon request.

Shortbread: crumbly, buttery traditional shortbread.

Sticky Toffee Pudding: the perfect warming dessert. Serves 10-14 people and comes with toffee sauce.

Pick-up at Coho Commissary in Lower Gibsons, or free local delivery. Everything is made to order and baked fresh the same day. Message me to get your order in!

I’ve been watching quite a bit of The Great British Bake Off recently. Today’s technical challenge… rough puff pastry! It’s all about lamination (getting those layers of buttery goodness). Hope I get a Hollywood Handshake for these… in the meantime, I’m prepping for my upcoming pop up at on 21st October! Hope it’s going to be a gouda time!

Flapjack is such a great hiking snack - just like a granola bar but you can customize what you put in it! Raisin and chocolate chip is a winning combo. Packed with oats and refuelling fats and sugars 😜
