In Lagos, the bread comes to you.
Someone walks past with a stack of Agege loaves and the smell arrives before they do. You buy one still warm, and if it is morning you are eating it with akara, the bean fritters, straight out of the oil and wrapped in paper. Or with ewa agoyin, the beans mashed soft under that dark pepper sauce. That combination raised a lot of us.
The thing about moving countries is that you can find almost everything again. Almost. It is usually the everyday food that goes missing, not the special occasion food. Nobody warns you about that part.
So when someone here tells me the bread tastes like home, I understand exactly what they mean, because I spent years looking for that same taste and could not find it.

À Lagos, c'est le pain qui vient à vous.
Quelqu'un passe avec une pile de pains Agege et l'odeur arrive avant lui. Vous en achetez un encore chaud, et si c'est le matin, vous le mangez avec de l'akara, ces beignets de haricots, tout juste sortis de l'huile et enveloppés dans du papier. Ou avec du ewa agoyin, ces haricots écrasés sous une sauce piquante bien foncée. Beaucoup d'entre nous ont grandi avec ça.
Ce qu'on découvre en changeant de pays, c'est qu'on finit par retrouver presque tout. Presque. C'est la nourriture de tous les jours qui manque, pas celle des grandes occasions. Personne ne vous prévient de ce bout là.
Alors quand quelqu'un ici me dit que le pain goûte comme à la maison, je comprends très exactement, parce que j'ai passé des années à chercher ce goût là sans le trouver.
