✈️ Off to the Arctic… but not before one last surprise.

Many of you know that while C³ Cakes is my creative passion, my full-time career takes me to the Canadian Arctic each summer as a marine chemist. For the next couple of weeks, I’ll be swapping buttercream for glaciers and seawater samples. ❄️🌊

Before I packed my bags, I finished creating a new signature flavour that I’m so excited to share with you.

☕ Introducing the C³ Signature Espresso Crunch – Arctic Edition

Four layers of my signature ultra-moist chocolate cake, filled with silky espresso Swiss meringue buttercream, house-made espresso toffee bits, crispy feuilletine, and rich dark chocolate crunch.

It’s deeply chocolatey, perfectly balanced, and made for anyone who believes coffee and chocolate belong together.

This special flavour will be available to order when I return August 1st.

Thank you for supporting my little business while I balance two careers. Every cake you order allows me to keep creating, experimenting, and sharing what I love most.

✈️ Off to the Arctic… but not before one last surprise.

Many of you know that while C³ Cakes is my creative passion, my full-time career takes me to the Canadian Arctic each summer as a marine chemist. For the next couple of weeks, I’ll be swapping buttercream for glaciers and seawater samples. ❄️🌊

One of the questions I get asked most is whether my signature Salted Caramel Chocolate Cake can be ordered without needing a custom-designed cake.

I’m so excited to say… yes!

Introducing the C³ Signature—my signature combination of rich chocolate cake, homemade salted caramel and crunchy toffee bits, and silky salted caramel swiss meringue buttercream, finished in my signature ocean-inspired design.

Starting this week, it’s available as a ready-to-order celebration cake in two sizes:

🍰 4” Mini Celebration Cake – serves 2–4 • $55

🎂 6” Celebration Cake – serves 6–10 • $75

📍 Pickup in North Saanich

🗓 Orders close Wednesday at 8:00 PM for Saturday pickup.

Each cake is baked from scratch in small batches using quality ingredients and decorated by hand.

80 years in full bloom 🌸🌿

This special cake was created for an incredible mom, grandmother, and passionate gardener whose signature flowers are dahlias — especially Piper’s Pink.

Chocolate cake filled with salted caramel Swiss meringue buttercream, homemade salted caramel sauce, and crunchy toffee bits 🍫✨

The dahlia blooms were handcrafted from cake pop and buttercream, nestled inside a watering can covered in white modelling chocolate — every element made from scratch, with lots of love and attention to detail.

🌊🍰 The Beaufort Gyre, in cake form 🍰🌊

For our recent meeting, I brought a little edible oceanography to the table. This cake was inspired by the stratified water masses of the Beaufort Gyre, from the polar mixed layer at the surface all the way down to deep water below.

🔹 Layered velvet and buttercream represent the vertical structure of the water column
🔹 A “slice” reveals Mixed Polar Layer, Pacific waters, Atlantic water, and deep water
🔹 Edible details include a cake pop mooring and tethered ocean profiler, and a top-down “drone view” with sea ice isomalt and white chocolate polar bears
