It all started when I was a little girl, with my favorite cake – a magic chocolate cake, made of eighty percent pure chocolate crème. It is said that the cake was once enjoyed by one of Romania’s last monarchs. I inherited the recipe form my best friend’s mother, 15 years ago, when I left my hometown in Western Romania to live in the capital, and I have been baking it ever since, for family, frien

ds and special occasions. I have always loved to see the joy a slice of my magic chocolate cake can bring to everyone who tries it – so I decided to spread delight to as many people as I possibly can, in Bucharest. I drew my symbol, my monogram and my cake boxes – and I started to bake the magic chocolate cake for my not-so-small community of Facebook friends and co-workers. And it all grew from there. Now, I am starting again, from scratch – I just moved to Montreal, with my beloved husband, George, and I am going to share this magic royal chocolate taste with all of you! What makes an unforgettable chocolate cake?

Yesterday I baked a Royal Delight cake for a 50th birthday.
The birthday man’s sister told me, “He loves chocolate cake, and I want to get him the best one.”

It’s a request I hear surprisingly often.

The truth is, my chocolate cake isn’t about dozens of ingredients or elaborate decorations.

It’s about choosing every ingredient with intention.

Rich cocoa. Fresh eggs. European-style cultured butter. Real chocolate. Nothing unnecessary.

Every ingredient has a purpose, and each one is carefully chosen because I believe great cakes begin long before they go into the oven.

Then there’s the recipe itself—the countless little details I’ve refined over the years that transform a handful of simple ingredients into something people remember.

Is it the best chocolate cake in Montreal?

I’ll let my clients decide.

For me, it always will be. 😉

L’été est probablement la saison la plus difficile pour le chocolat. 🍫

Travailler le chocolat lorsqu’il fait chaud, c’est avant tout une question de préparation. Une chose que j’ai apprise au fil des années, c’est que laisser la crème reposer suffisamment longtemps rend la décoration plus fluide, plus nette et plus précise.

Parfois, ralentir au début permet d’aller plus vite par la suite. 😉

Working with chocolate in the heat is all about preparation. One thing I’ve learned over the years is that giving the cream enough time to rest makes decorating smoother, cleaner, and more precise.

Sometimes, slowing down first lets you move faster later.

A Little Marvel made for a birthday surprise.
Two layers of our signature decadent chocolate cake, wrapped in a delicate chocolate collar and finished with cocoa.

This one was ordered by a husband for his wife’s birthday — the kind of cake that says I wanted something special for you.

Sometimes the smallest cakes carry the biggest celebrations.

And this is what that dough became.

Cozonacs made quietly, in small batches, already spoken for before I even had time to share them.

Two flavours:
– Plum & chocolate
– Cinnamon with walnuts and pecans

Deeply caramelized crust, soft layered crumb, rich filling — the kind of cozonac that slices clean but pulls apart in strands.

I didn’t announce them this year.
I just made them — the way they should be made.

Just time, patience, and a dough that was allowed to develop slowly — to stretch, breathe, and build strength.

This texture doesn’t happen by chance.
It comes from fermentation, precise mixing, proper rest, and respect for the process.

Before flavours.
Before baking.
This is where the magic begins.

I said I wouldn’t make cozonac this Easter… but I couldn’t resist the sweet messages and loyal hearts who reached out. So here they are — a few lovingly wrapped treasures, made with all my heart.

And because tradition holds a special place in my life, I also coloured eggs the old way — with leaves, onion peel, and hibiscus. A little ritual of love, patience, and beauty.
