What makes an unforgettable chocolate cake?
Yesterday I baked a Royal Delight cake for a 50th birthday.
The birthday man’s sister told me, “He loves chocolate cake, and I want to get him the best one.”
It’s a request I hear surprisingly often.
The truth is, my chocolate cake isn’t about dozens of ingredients or elaborate decorations.
It’s about choosing every ingredient with intention.
Rich cocoa. Fresh eggs. European-style cultured butter. Real chocolate. Nothing unnecessary.
Every ingredient has a purpose, and each one is carefully chosen because I believe great cakes begin long before they go into the oven.
Then there’s the recipe itself—the countless little details I’ve refined over the years that transform a handful of simple ingredients into something people remember.
Is it the best chocolate cake in Montreal?
I’ll let my clients decide.
