Did you celebrate banana bread day? πŸŒπŸ™ƒ

I may have been the only person who didn't make pandemic banana bread at any point in the last two years, despite having a freezer full of overly ripe bananas.. so yesterday I finally made a dent in that freezer stash & baked up some oatmeal chocolate chip banana bread muffins πŸ˜‹ (with a inspired cinnamon sugar & walnut topping of course)

I know I've been pretty MIA on this account & the little baking I've done hasn't made it past my own mental posting hurdles, but since I happened to finally bake up a pretty tasty version of banana bread yesterday, & then found out that today is actually I figured this serendipitous creation was worth sharing.

It's definitely not a fancy, fun reel.. just a classic, humble but tasty muffin shot, so if you happen to see this late night post despite ig algorithms, & have read along this far, I hope it makes you smile & inspires you to finally use those bananas that have been chillin' in your freezer for far too long. I know I'm glad I was able to give mine a new life & a chance to finally be enjoyed. πŸ˜‰πŸ™ƒ

Farewell August, I will miss you πŸ˜­πŸ‘‹β€β˜€οΈ

Sadly my drive for baking & posting took a major dip this year, but of course I still managed to make an epic birthday s'mores cake πŸ₯³πŸŽ‰

This cake actually ended up serving 4 family birthdays beginning with my mom's on , August 10th, followed by my own birthday on the 12th, & my dad's on lucky .

I'd been wanting to make a s'mores cake for a while, but knew I definitely had to make it happen after drooling over the gorgeous versions created by & .

I went full on s'mores with this combo: marshmallow flavoured cake batter with graham cracker crust.. filled the layers with marshmallow frosting & a drizzle of melty chocolate ganache & wrapped the crumb coated cake in graham cracker buttercream.. added a chocolate ganache drip & topped with chocolate chip cookies, mini marshmallows, toasted coconut marshmallows, & s'mores cereal. πŸŽ‰ I think it was absolutely perfect πŸ™Œ I know some might have preferred a chocolate cake base, but to me, the highlight of s'mores is that sweet melty marshmallow with the gooey chocolate so I had to make sure the marshmallow flavour shone through. Since I'm making up for lost time with this post, in addition to being made on to celebrate my cluster of family birthdays, the cake is topped with the chocolate chip cookies I meant to share on earlier this month, & toasted coconut marshmallows in honour of & , which was yesterday. I may not have been able to spend yesterday at the beach, but I did visit the beach on my mom's birthday so it seems fitting in a full circle, interrelated kinda way.

Anyway, if you're still following my ramblings or even just taping that ❀ on my posts, I truly appreciate you sticking around with me & I hope you've had a wonderfully lovely summer.

How do you spell it? 'Doughnut' or 'Donut' πŸ€”?? Let me know your preference.. As a Canadian I tend to prefer the longer, 'u' inclusive UK spelling over the Americanisms πŸ€·β€β™€οΈ

These delicious baked cinnamon spice doughnuts were my Mother's day brunch contribution this year. Thanks to for the perfect recipe - they were so delectably light & fluffy, they were gone by the end of the day. πŸ˜‹

I hope you were able to treat yourself to a sweet 🍩 today - I took advantage of the free doughnut offers from both Krispy Kreme & Tim Hortons for a little head to head taste test.

My initial bite of Krispy Kreme was a bit underwhelming, but once I got taste of the Oreo creme filled centre 🀀🀀🀀

The Tim Hortons doughnut was soooo sweet, so the initial bite was was more exciting, but ultimately the sweetness overwhelmed the intended flavour.

Overall impressions:
Krispy Kreme: Perfectly balanced flavour & sweetness.
Tim Hortons: Overly sweet, yet decadent & addictive.

I think I'd be more interested to try another Krispy Kreme since it seemed like the more special treat to me. Possibly because it may have been the first time (at least in the last 10 years) that I've even had a Krispy Kreme.. whereas Tim's donuts are more familiar.. but honestly both were delicious & I'm excited to finish them off later this weekend 🀀

Happy International Tea Day!! πŸ΅πŸŽ‰

I love incorporating tea flavours into my bakes, whether it's infusing the milk a recipe calls for with tea or using finely ground tea powders like matcha in the dry ingredients, there are so many delicious teas to bake with!

So, in honour of , I present: πŸŽ‚ & I teamed up to bring a lovely group of tea enthusiast bakers together to share some unique tea infused creations. It's an ode to tea day, baked πŸ˜‰

Can you tell that the little cakes are meant to be the teacups to the 'teapot' inspired main cake? 😊 Anyone else think the solo cake photo looks like a fancy tophat (fit for high tea of course 🎩)

I'm truly excited to share this beautiful tea infused creation! I really wanted to incorporate my three favourite tea flavours: matcha, chai, & earl grey, & I'm so proud of the result! Though these aren't normally teas that get mixed, since I was just baking for myself, I decided it'd be fun to try!

So, I made a chai cake, topped it with earl grey buttercream, & decorated with matcha (raspberry filled) macarons πŸ˜‹

The chai & earl grey flavours worked together surprisingly well & while I'm not really a fruity tea fan, raspberry makes for tasty iced tea & pairs well with matcha. πŸ˜‰πŸ΅

Chai cake recipe was modified with from 's egg nog recipe in with chai latte in place of the eggnog.

I've been in a bit of baking funk lately, as I tried (& failed 😬) to catch up on other responsibilities. So, despite my cluttered kitchen, the busyness of this week with work, & taking time outside to enjoy the beautiful warm weather, for the first time in a while I felt truly excited to dust off my baking tools & bring this idea to life.

I hope seeing it brought a smile to your face too, because making it truly made my day & I can't wait to dig in! 🀀

I meant to share this for blueberry pie day two weeks ago, but since I missed it, I was glad to see that today is actually πŸ™Œ

Apple pie isn't typically a spring or summer pie flavour so it seems like a bit of an odd time to celebrate, but this blueberry/apple pie combo was absolutely divine πŸ˜‡πŸ€€

I used a store bought pie dough that was on super sale & filled it with an incredibly tasty blueberry & apple compote filling πŸ˜‹ The blueberries really added such a delicious burst of flavour. Apple pie, elevated πŸ™Œ

Happy Earth Day!! 🌍🌎🌏

These incredibly delicious, cream cheese stuffed matcha white chocolate chip cookies, aren't just green πŸ’š, they're also ♻️.

Remember the colourful tartan cake I shared last week to mark my return to this account? Well, as you can imagine, there was quite a lot of extra frosting chilling in my fridge.

I made the whole cake with recipes, so it was one of the rare cakes I decorated with a version of American buttercream, essentiallyjust butter & sugar. So, when mixed together (with a little added brown sugar) it was a beautifully green bowl of creamed butter & sugar ready to be cookies. πŸ˜‹

Since it was already green & I needed to balance out the extra sweetness, of course I had to add Matcha! 🍡

The wonderfully potent green tea powder makes for delicious tea lattes & uniquely tasty baked goods.

These matcha cookies, made with leftover buttercream & paired with white chocolate chips, crushed almonds, & a decent cream cheese frosting, were truly extra special.

I really make sure that nothing in my kitchen goes to waste & that most of my scraps are composted. So I was really proud that I was able to give my buttercream a second life & that these cookies turned out so well.. I just wish I had a few left πŸ˜…πŸ€€πŸ’š

Cup of tea & a mini teapot shaped scone anyone? πŸ™‹β€β™€οΈ

Okay, I'm a bit late to the celebration of since most of the UK is probably fast asleep by now, but πŸ€·β€β™€οΈ

Just wanted to share a few pics from this time last year when I tried to make mini shaped scones with cookie cutters. The teapot shaped one has a slit in the bottom so your cookie can rest on the side of your cup - I think it worked pretty well with the scone.. what do you think? Can you tell it's a teapot?

How 'bout the 3rd slide.. can you tell they're supposed to be playful cats? 😸😹 I'll admit, it's a bit like seeing animals in the clouds, but once you see it, you see it, ammaright!?

Happy 4/20 πŸ˜‰

For today's recreational holiday, I scrolled to photo #420 (thanks ) & was pleasantly surprised by how fitting this photo was. Especially considering the sheer volume of cat photos on my phone.

So, we're throwing it back to these brownie ice cream sandwiches on this beautiful 20th of April day.. Who's ready for more warm sunny days to enjoy some extra indulgent & refreshing treats!? πŸ™‹β€β™€οΈ

These may or may not have been *special* brownies, but if you've got the munchies while you're chilling poolside, they'll definitely hit the spot πŸ™Œ

I made this cake two months ago on my half birthday (Feb 12) & have been meaning to post it ever since πŸ™ˆ

Since I didn't manage to post for the themed collab, the launch of 's new show , or even last week's , I'm excited to finally share it today for AND to celebrate today's announcement from on the launch date for her newest book, .

Today, I'm proud to celebrate the many forms of Art & my Scottish heritage. (Can you tell I tried to hide some of the messy tartan pattern with a Scottish thistle?)

When I saw post her beautiful tartan cake ( comb) I knew I had to try it. I had originally thought I'd make it for Christmas, but it was one of the many things that I just didn't manage this year.

Swipe for my inspiration pic & for a flashback of the cake I made around this time last year for 's birthday. Happy early Birthday Sam, I'm looking forward to bingeing the rest of Men in Kilts now that all the episodes are available in Canada, as well as reading more about the trip in your book πŸ™Œ

Sadly, for the past few months especially, baking & this account has become just another part of my life I felt I couldn't keep up with & was constantly falling behind in. While I probably won't be able to keep up, I finally feel ready to get back to sharing my creations after taking a much longer than anticipated social media posting break.. Giant bagel shaped cookies anyone? πŸ™‹β€β™€οΈπŸ˜‚

That's right, in honour of , I made bagel cookies πŸ˜‹πŸͺ

The last time I made bagels they were rather dense & underwhelming, so I decided to leave the bagel making to my local , πŸ₯― & put a fun twist on the giant chocolate chip cookie trend.

I made these using the New York style, walnut chocolate chip cookie recipe from since I had a feeling these thiccc cookies would hold the big bagel shape best.

I think they turned out pretty great, but at a whopping 200+ grams, they're definitely a treat to be shared πŸ˜…πŸ€€

You don't need gelatin to stabilize whipped cream πŸ™Œ The starch in powdered sugar acts as a stabilizer. Yes, gelatin will make it firmer & more pipable, but it also gives it that tell tale gelatin texture in your mouth so I typically prefer to keep my whipped cream fluffy and free of... whatever's in gelatin these days 😬

Whipped cream can be sweetened with powdered or granulated sugar - & while I find the taste can be a little nicer from dissolving granulated sugar in the cream, larger batches benefit from the addition of powdered sugar both in terms of texture & stability. Since it's easy to over whip your cream, adding powdered sugar helps ensure the cream is evenly sweetened without undissolved sugar crystals, & keeps the finished product from weeping on your beautiful desserts. πŸ˜‰

How do you typically sweeten whipped cream? Let me know if you try a mix of both types of sugars & if you notice how the addition of powdered sugar helps.

I've got a few more whipped cream making tips, but since I'm not a fan of gelatin & my other tips involve saving whipped cream fails I figured I'd start simple. Let me know if there are another types of desserts you'd like to see tips for.
