I made this cake for my dad this fathers day. This super moist olive oil cake made with almond flour and citrus just hits the palate with harmonious flavors that just compliment eachother so nicely. It's a pure natural flavour. It tasts like Italy... if that were a flavour 😜
Soo here's the recipe incase you would like to give it a go. By the way its soo easy to make and you only need one bowl to make it. You can either make it with part almond flour and part all-purpose orr if you want the gluten free option just convert the regular flour in this recipe to almond flour. 👉 (1 cup) all-purpose flour
(3/4 cup) sugar
(2/3 cup +1/4cup) almond flour
(1 tsp) baking soda
(1/2 tsp) baking powder
(1/2 tsp) salt
(3/4 cup) olive oil
(2 tbsp) lemon juice
(1 tsp) vanilla extract
(1 tsp) almond extract
2 eggs
(1/3 cup) almond milk
Zest from 1 lemon
Zest from 1 orange
Glaze (1 cup) powdered sugar (1tbs) lemon juice
(1 tbs) orange juice
(1 tsp) lemon zest
(1 tsp) orange zest
Method ▪︎Grease and line a 8″ round pan with olive oil.
▪︎ Preheat the oven to 350F/180C.
▪︎In a medium bowl, sift and whisk together the flour, sugar, almond flour, baking soda, baking powder, salt. Add the zest.
▪︎Make a well in the centre of the dry ingredients, add the wet ingredients such as olive oil, lemon juice, vanilla extract, and almond extract.
▪︎Whisk together until almost combined then fold with a spatula to ensure all ingredients have been incorporated. Do not overmix.
▪︎Pour into the prepared cake pan and bake for about 35-40 min on the middle rack.
▪︎when cool, release the cake from the pan. With fork poke holes all over the top surface and pour the glaze overtop.
▪︎Garnish with fresh fruits, almonds, rosemary or lavender and serve imeadietly.
