Hello, June! 🩷

My absolute favourite month of the year: it's my birthday month; it's when the garden starts coming into full bloom; it's a month to spend more time living in the moment and soaking up the last days of spring; it's a time to reflect on the year so far and look forward to all that's to come!

While the Bakehouse will be closed for pick ups until the end of the month, there will be new delicious sourdough items that will celebrate the season when I return - it'll be worth the wait, I promise! πŸ˜‹

A very Happy Mother's Day to my Mum! πŸ₯°πŸ’œπŸ’πŸŒˆπŸŒ·β˜€οΈ

Travelling together and all of the memories and experiences we've had over the years is something that I cherish deeply and often look back on 🩷

We avoided sea sickness on rough boat rides to the Great Barrier Reef and the Cliffs of Moher in Ireland; we explored quaint cities in Yorkshire and the beauty of the English countryside; we've walked along many beaches in The Bahamas, Australia & Nova Scotia; our dreams came true when we spent the most magical day at Highclere Castle (Downton Abbey); we've taken countless train rides throughout England and whole of Ireland; and my favourite concert memory was seeing The Rolling Stones in Hyde Park, London together ✨

I wonder where we'll go next 🌎

Starting the day off with my favourite way to enjoy one of our bagels: 🧑 peat-smoked Scottish Atlantic salmon
🀍 cream cheese

Who else can't wait to dine outdoors again? β˜€οΈ

I was looking through my camera roll and was reminded of all the lovely times spent dining al fresco over the years - it's one of my favourite things to do during the warmer months, even if it's just a cup of tea and a slice of sourdough 🩷

This simple but extremely flavourful focaccia sandwich is always on rotation during the summer months because it uses simple, homegrown produce, high quality ingredients and a wee bit of time to put together. And it's perfect for sharing πŸ€—

For the base, I made a beautiful homemade pesto with organic basil from our garden, thinly sliced hot mortadella, thick slices of tomato (these were san marzano's from our garden), fresh mozzarella, fresh basil leaves, a drizzle of good olive oil, balsamic glaze, a sprinkle of flaky sea salt and fresh cracked black pepper 🫢🏼

And of course, our crispy on the outside, fluffy on the inside sourdough πŸ’™Sea Salt FocacciaπŸ’™ that contains a healthy amount of olive oil and a sprinkle of flaky sea salt

You know it's going to be a good day when it starts with a couple slices of sourdough from πŸ˜‹β˜€οΈ

This particular sourdough is our Sesame-Crusted, which is coated in organic sesame seeds for a lovely toasted and nutty flavour and is loaded with nutrients, vitamins, minerals, protein and fibre!

Six components go into making this loaf really special:
1. Fresh-stone milled organic bread flour from in Fergus, ON.

2. Our organic 12 grain flour is blended in-bakehouse using organic flours from 1847 Stone Milling and (organic whole wheat flour, organic whole grain spelt flour, organic whole grain rye flour, organic whole grain barley flour, organic whole grain khorasan flour, organic whole grain buckwheat flour) and a blend of organic seeds & grains (organic whole grain oat flakes, organic brown flax seeds, organic white quinoa, organic amaranth seeds, organic raw sunflower seeds and organic hulled millet).

3. Organic sesame seeds.

4. A high-quality fine sea salt from - hand-harvested sea salt off the stunning coast of Vancouver Island.

5. Filtered water.

6. Our 100% natural levain (sourdough starter), a very key component in the fermentation process (~26 hours), which makes for easier digestion. A happy, healthy gut = a happy, healthy you! πŸ€—
