Going forward starting Jan 2026.

Because I have a large customer base with orders coming from all over, I have decided to help the process.

Requests for my recipe have been made, but I regret that it's proprietary information. On a related note, I'm enthusiastic about baking and will sharing the select recipes I repeatedly use!

Shortbread Recipe and Method:

Ingredients:
1 lb butter
1/2 cup cornstarch
1 cup icing sugar
3 cups SIFTED TWICE flour

1. Soften butter and beat in countertop mixer on high speed for 4 minutes
2. Gradually add cornstarch, icing sugar, flour mixture. You may have to slow your mixer as the flour mixture may fly out all over the place.
3. Once everything is incorporated, beat on high speed for 12 minutes, stopping twice to scrape down sides of bowl. It may look like it will not come together, but it will near the end of the 12 minutes.
4. place about a teaspoon of batter on on cookie sheets. you should be able to get 12 - 16 cookies on a cookie sheet. Space well apart.

5. Bake at 325 for 22 minutes.
6. Remove from oven and leave on pan for 5 minutes.
7. Remove from pan with small spatula to wire racks to cool.

You requested and I delivered.

I've received feedback from several customers suggesting the convenience of thawing one piece of lefse at a time. Therefore, I will now be stacking lefse between pre-cut parchment sheets, followed by vacuum sealing.
Note: I have also reverted to the traditional method of folding.

Potatoes…

I’m a data type of person. My calculator is always handy..

Just cooked 20 pounds of potatoes and here is the preliminary data:

Raw= 20 pounds( unpeeled)
Peels after cooking= 1.9 lbs
Cooked potatoes(not riced yet)= 11.16

% of the 20lbs=.558
So 56% of the orignal weight is Lefse product.
Nearly 1/2 the raw potato weight is lost in the cooking process.ļæ¼

**It will be interesting how much more I’ll loose after ricing.
