I only create desserts I love and crave, so how am I supposed to choose?

I thought I’d start a little series called Craving, and today I’m craving our pistachio tiramisu. 💚

It might look like matcha, but that green is all Antep pistachios. We make our own paste — no additives, just pistachios.

The answer is actually pretty simple. 🤍

At Crushed Almond, I don’t make them with cream cheese. I make every one with authentic Turkish labneh because that’s the cheesecake I love to eat myself. It gives them a beautifully creamy texture without feeling heavy and lets each flavour speak for itself.

**I never really liked baklava growing up.**

Not because I didn’t love the pastry or the pistachios.

It was because so much of it was just too sweet.

I always wanted to taste the pistachios, the butter, and those delicate flaky layers, not just the syrup.

So this is the baklava I love.

Made with about 50% less sugar and more than twice the amount of first grade Antep pistachios from Türkiye. In fact, we’re currently paying $92 per kilo for our pistachios.

Could we use less? Sure.

Could we use a lower grade pistachio? Sure.

But when the pistachios are this good, I want them to be the star.

Rich. Nutty. Flaky. Balanced.

Not everyone’s idea of baklava.

But definitely mine. 💚🇹🇷
