At this point Phoenix deserves partial ownership of this business...

I’ve been posting all my testing, flavour experiments, customer requests, successes, failures and feedback lately…

Meanwhile the one consistently doing the heavy lifting hasn’t been acknowledged nearly enough.

This fella has survived every phase of my sourdough obsession.

Aggressive feeding schedules.
Random experiments.
Last minute flavour ideas.
Late night dough decisions.
Me staring into the jar like it’s going to personally answer my problems.

And despite everything… he still shows up and does his job.

Honestly, the trust I put into this jar daily is concerning 😅

Every loaf, bagel, cookie, sandwich bun I bake literally starts with Phoenix first.

One of my customers requested a Kalamata olive loaf and honestly… this was the first loaf I didn’t get a chance to try myself before sending out 😬

Usually I test EVERYTHING before anyone gets it.

AND for the record… I DID test an olive loaf with Moroccan olives and that one was a huge hit with myself and my family 😂

But I was busy testing a bunch of other things I needed to try and although my son LOVES olives… the one olive he hates is Kalamata's 🙄

My husband also informed me he would only try the loaf if it had feta in it.

Thank you sir. Not picky at all 😂🙄

So basically I was on my own for this one.

I mixed, shaped, and baked. The loaf looked BEAUTIFUL when it came out.

Delivered and tried waiting patiently to hear back.

Then she sent me feedback.

She said it was delicious…but what made me happiest was hearing that all FOUR of her children independently said they loved it too ❤️️

Listen… getting kids approval is no joke lol.

Then she sent me a crumb shot and somehow the inside was just as beautiful as the outside.

Honestly, customer requests help me sometimes because there are SO many things I want to test and not enough taste testers sometimes…

Especially when I live with people who are “not picky” but somehow still incredibly particular 😂

Cinnamon raisin.

I really thought this one would be easy.

It LOOKS simple.

Apparently… it is not.

First attempt:

Added cinnamon raisins.

I loved it.
My son loved it.

My husband and sister?

“There’s not enough cinnamon.”

Second attempt:

I basically dumped half the cinnamon bottle in there thinking HOW could you possibly not taste it now?!

Still somehow “needs more cinnamon”.

So I started researching and learned sugar actually enhances the flavour of cinnamon.

Problem is… sugar and sourdough can become a disaster real quick.

Too much sugar can literally turn your dough into soup.

3rd attempt: I tried anyway.

It baked fine… looked good… tasted good…

Until the next day when I sliced it and found a hard crystalized sugar ribbon running through the middle.

Absolutely not.

I don’t care how “good” it tasted, I wasn't settling.

Honestly, I was ready to cut my losses and remove it completely.

Sometimes you have to know when something just isn’t worth the fight.

BUT…

I tried one more thing.

4th attempt: I made a cinnamon sugar butter spread to create the swirl instead.

AND IT WORKED 😭

Not only did it work…it became the BEST version.

Weeks later I tested a frozen loaf:

Thawed overnight,
sliced it,
didn’t even toast it…

Still soft.

Then toasted? Game over.

So yes…the cinnamon raisin loaf survived and officially earned its spot on the menu 😂

Let’s talk sandwich buns.

Because apparently not everyone wants what I want 😒

If I’m making a sandwich with mortadella, prosciutto, salami etc… I want it on a crunchy artisan panino.

I want crust. I want chew. I want character.

I do NOT want it on some soft wonderbread-style bun.

Maybe it’s nostalgia, maybe it’s the Italian in me, but that’s how my nonna made them for me and to this day that’s still elite.

Now… my husband and son?

Complete opposite.

They want soft sub buns.

Not because they don’t like good bread… they just prefer soft sandwich buns for lunches.

And do you know how much it pains me to BUY those buns somewhere else?! 😂

I’ve been testing my own soft sub-style buns.

And it’s taking time because I’m picky. (I'm not picky, it's them but for the sake of being nice, let's say it's me, but wait for it, someone that knows my husband will comment on this 😂😂😂)

They need to taste good, stay soft, freeze well, thaw well, and be good with no toasting because nobody is making toasted sandwiches at school or work.

So yes… I’m deep in a sandwich bun journey right now.

Another batch is going today.

Please pray for me lol.

Yet again, I got pulled into another “I think I’m gluten intolerant” conversation.

Same script every time.

“Bread destroys my stomach, One slice of pizza and I’m bloated for hours, I look pregnant after eating.”

And every time I say the same thing…

Maybe it’s not the gluten. Maybe it’s the s**t food.

The preservatives.
The additives.
The overly processed flour.
The rushed dough.
The fake ingredients your body doesn’t know what to do with.

So I told her the best test is to try real homemade sourdough.

Yes, it still has gluten.

But it’s made with simple ingredients and zero crap.

Slow fermented, properly made, the way bread was meant to be.

Before you label yourself intolerant… try the real thing first.

The next week I gave her a loaf and told her to report back.

She came back shocked.

No bloating.
No stomach issues.
No pain.

Nothing.

And honestly, I was just as excited as she was.

Because so many people think bread is the problem.

Sometimes it’s not the bread.

Sometimes it’s what they’ve done to it.

Mother’s Day has me thinking about the little gifts that actually get enjoyed 🤍

For my son’s communion this past weekend, I wanted to create party favours that wouldn’t end up tucked away in a drawer or forgotten at a garage sale someday.

I wanted to give something beautiful, thoughtful, and something people could truly enjoy.

So I created these handcrafted favour and the reaction at the dessert table said it all.

As guests walked by asking, “Are these the party favours?” with so much excitement, I knew I made the right choice.

Honestly… seeing people genuinely excited over a party favour felt like such a win.

Mother’s Day has me thinking about the little gifts that actually get enjoyed 🤍

One of my customers sent me a message asking if I could make sourdough brioche hamburger buns.

Funny enough, I was already testing regular sourdough burger and hot dog buns for summer.

But once this request came in…I put those on pause and started working on the brioche.

Now I’ll be honest, I don’t love all brioche because a lot of them are too sweet.

So I wanted to make one with the right balance: soft, rich, but not a dessert disguised as a bun.

After some testing, I baked a batch.

Sent a photo to my family first. Their response?

“Those look like AI.”

I assure you… they are not 😅

I sent the photo to the customer and they immediately asked if they could order them. I said hold on… I still need to eat them first 😂

We tried them that night.

Delicious.

Next day?

Still soft. Still perfect.

They ordered. A few days later I got the feedback…

They absolutely loved them.

And just like that another unexpected item made the menu.

Mother’s Day is around the corner 🤍

As a mum myself, I appreciate the little moments more than anything else. The moments to slow down, savour, and actually enjoy.

That’s exactly what I wanted to create.

Although I bake sourdough… I actually try not to overdo it.

Is it a better carb? Absolutely. But it’s still a carb.

I usually fast most of the day and eat later in the afternoon.

Then I started jiu-jitsu.

And wow… it humbled me real quick.

Almost every class I felt the same thing, nauseous during warm-ups, and off for the rest of the night.

At first I thought it's normal, it's new. Your body is getting use to it.

But as I keep going I thought, I can't keep training like this. I did some research.

The problem?

I wasn’t eating.

Dinner was too close to class, so I’d either go in under-fueled…or risk throwing up.

Everywhere I looked said the same thing: you need carbs before training.

And I resisted it at first. I mean, the fear of tossing my cookies mid role was no joke.

But as I learned more I understood that it’s not about just eating any carbs, it’s about eating something your body can actually handle.

Something that won’t sit heavy.

Something that won’t mess with your stomach mid-roll.

That ended up being sourdough, and I wasn’t the only one.

Almost every trainer I watched in the videos I came across said the same thing - sourdough is actually one of the better choices before training.

Because it’s easier to digest, sits lighter on your stomach, and gives you the fuel you need without feeling heavy or off mid-workout. (One of them said you can top it with Nutella...Imma take his advice next class😂)

Turns out… the bread wasn’t the problem.

Skipping it was.
