A Taste of Ulster - Naturally!
I was lucky enough to grow up not only in Northern Ireland but also to have grown up with a mother and indeed a family that loved to bake. In fact they still do, my father was in the merchant navy and he was the main cook in our house and my mother loved to bake. So, I remember home cooked meals from scratch and home made bread/cakes/pastries. I Guess it rubbed off on me, I too love to cake and love nothing more than sharing with my own family a home cooked meal and talking about our day around the table in the evening. Its always been a very important part of our family life and although I left “home” a long time ago (1999)I’ve always tried to follow the home cooking rules!
I’ve been lucky enough to have lived across the U.K and the Middle East as well as now here in Canada. Moving to Canada was a bit like moving a little closer to NI, a lot of Countryside is very similar and with a large number of Celts settling in Canada and calling it their home , I guess that’s what makes it feel like home to me. I do however , miss this tastes of home so I bake and try to pass along to my own kids the traditions I grew up with, home made wheaten bread, real buttermilk scones, soda and potatoe bread as well as cakes and a multitude of fresh made apple pies and savoury pies.
