I don't know about all of you, but after Christmas I found myself needing to lose a few pounds. I started looking for healthy recipes that were low in fat and high in protein, but still yummy. This is one of my fave new recipes - Chocolate Black Bean Blender Muffins - super easy to make, low in calories and fat, and high in protein. The recipe makes a dozen. I pop them in the freezer, then take them out one at a time and thaw in the microwave when I want a snack.
