So, second attempt at baking cookies on a campfire. Our first try was in a cast iron pan over the dying embers of the evening’s fire. Even at low temperature it was hard to get the top browned before burning the bottom, so …
Attempt #2. We used two stainless steel bowls, one nested inside the other with a tinfoil pie plate, lined with parchment paper and placed it in the bowls to keep the pie plate away from direct heat. We then wrapped the top in tinfoil, effectively creating a small oven. This method allows for a little higher heat, took about 25 minutes to bake the giant cookie we made and I have to say, it turned out pretty well.
Today we have apple cinnamon muffins with a vanilla custard center, savoury roasted tomato with pesto and mozzarella scones and freshly baked maple walnut cookies.
Perfect for a brisk autumn day.
It feels like fall this morning, we have fresh baked goodies to help drive the dampness away. Savoury aged cheddar and green onion scones, apple pecan muffins and a selection of fresh baked cookies. Stay warm and have a peaceful Thursday
Fruit cobbler, you can make this using our plain scone mix. Make the filling using any of your favorite berries, or peaches, plums, mix up a bag of Mother Hubbard's plain scone mix crumble over the top with a mix of cinnamon and sugar sprinkled on top. Bake in a 135° oven for 45mins.( baking times will vary on different ovens, adjust time and temp accordingly,) cool and serve up with a scoop of your favorite ice cream.
1/2 cup sugar
1 1/2 tablespoon cornstarch
7 cups (1 3/4-2 pounds) mixed fresh berries (use no more than 1 ½ cups strawberries; halved if large)

Thinking about a road trip this weekend? May I recommend beautiful Yale, they have a gorgeous little tea house, rich history steeped in stories of gold rush days, pioneers, and local aboriginal culture. They also had a very famous late author who resided there for many years, W.P. Kinsella, you may have heard of his book, field of dreams. Back in 2012, my family and I enjoyed an extended vacation in a rural village of Burgundy, France. It was there that I was introduced to the quiet but fiercely guarded appreciation for a simpler, more connected life and the fundamental role that fresh, locally grown and made food plays in sustaining that perspective. It’s a privilege to be able to buy your produce from the person that grows the vegetables, the woman who makes the cheese, the farmer who raises the chickens and the baker who bakes your bread. The trip was a culinary awakening and the inspiration that led me to move to beautiful Hope, British Columbia from Vancouver. Being able to embrace rural living year-round is pure joy.
Mother Hubbard’s Mixes was an idea born of twin desires. First, to save people money while at the same time offer premium ingredients they could use when baking at home. We wanted the product to be so simple that even the most novice baker could use the mixes with confidence and pride. Second, to provide families the opportunity to create those shared experiences and life-long memories I’ve carried with me from the kitchens of my childhood.
In our small shop located in downtown Hope, we launched our first products in the summer of 2017. Our expansion came through farmers’ and independent markets in the Lower Fraser Valley. Along the way, our fans grew and followed us in person and on social media. We feel truly blessed to have met so many new friends and with their support amidst a surreal moment in all our lives, we feel ready to launch our website.
We look forward to providing more baking mixes, cereals, and other surprises in the future. The thought of introducing our products to folks near and far excites us. Welcome to our community!
