It's been fall/comfort baking time around here lately, and that means the pumpkin cinnamon sugar loaf is back!!!! I baked off my pie pumpkins yesterday & used some for the loaf today. Lots of spice, super moist, & that cinnamon sugar topping just flakes off, it's just perfection! 😍
Also, it's been forever since I made brownies, so did up some mint ones for my brother's birthday in September. And always a classic bake, banana rescue cake- chocolate chips, brown sugar topping, banana cake. I really do love making comfort classics!
Now, bring on all things pumpkin 🎃 & pecan!!!

Another bundt for the books! Did some experimenting this past weekend for my mama's birthday and came up with a coconut mango bundt cake, baked off in the Blossom pan. Not enough coconut flavour, maybe too much mango(?!?), but now I know for next time that those flavours are great together! Plus, I love making bundt cakes! They are just so pretty! 😍

Slowly, ever so slowly building my bundt pan collection! 😍 I'm in love with the magnolia flower pan.
I made a pumpkin donut bundt, dusted with cinnamon sugar, for Thanksgiving and couldn't help but make it again, just for a treat. It was so good!
Dreaming up gingerbread snowflake swirl cakes for the upcoming holidays!

So I decided to do some experimenting today and try to bake something I've never made before. I kept thinking about basque cheesecakes, but didn't want to make a whole large cake...& y'all know how much I love my loaf pans so 😏
OK, (after the taste test), this thing is creamy, custardy, almost flan like. I think it's good on its own, but would be just as great with a jam or fruit compote on top! I love it when an experiment is a success!

Heeey all! Time for some "real" talk!
So, this year (well, the end of '23 to be exact), I had decided that I wanted to go full steam ahead with my baking. Think, maybe take some courses to further my skills, maybe open up a little bakery stand, etc, etc. BUT, the exact opposite happened. Life happened. And I am still trying to get back to my normal, whatever that entails. A little back story...so in November '23 we lost our little man Percy (tabby cat) to cancer & not even 2 months later we lost Georgia(calico) to cancer as well. G was my soul cat. She just got me. She, well, they both, took big pieces of my heart when we lost them. It's been 6 months now since Percy crossed that rainbow bridge & 4 or so since Georgia joined him. We have since opened our home & hearts to 2 little monsters, Elsie & Vinnie. They are healing us bit by bit. But I'd be lying if I said it's been easy. A lot of days have been a struggle, but I am trying my best.
I'm slowly trying to bake again, to find that joy & fulfillness in doing something I love. There's been a lot of banana bread & lemon strawberry bundt cakes. Simple, but delicious treats. I'll get there, hopefully sooner rather than later. But I know I can get back to where I once was with baking. And if you've made it this far in reading this, please know I'm thankful for you & I appreciate you. 🥰❤️

If these cookies don't give you Fall vibes, I don't know what the heck will! Brown butter maple pumpkin cookies 🤤 Cooked up a pie pumpkin, browned some butter(I love brown butter, & it's been too long since I've made cookies with it!) These babies have ample maple flavour & are coated in a cinnamon sugar mixture. So, so good! Need any Thanksgiving goodies, y'all know where to find me! 😉❤️

Seems like I've been waiting all summer for peach season to show up & now that it's here, I'm taking full advantage! Made a blueberry peach crisp last weekend & a yogurt peach cake tonight. I love that this cake is so versatile; you could swap out the peaches for any type of berry or stone fruit. And drizzle a glaze over the ridges! 🤌😘🍑🫐🍓🍒What's your favorite summer fruit?

It is my mumsie's birthday today & we had party shenanigans Saturday. So of course, I had to make a treat of some kind! And then these cakey, jammy, lemon curdy, cheesecake struesel coffee cakes were born! They are mini (single serve), 4 inch cakes with a cake base, jam layer, cheesecake layer & finally a struesel layer to top it off. AMAZEBALLS 🤣 If ya need some of these, hit me up, because I can't wait to make more of these babies!
And the token banana chocolate chip bread loaves fresh outta' the oven for some hungry mechanics on Monday ❤️

It's been a long time, I know. I've been laid up for the last two weeks with a fractured ankle, so that's pretty much drained all energy & motivation that I've had. BUT, I did manage to hobble around the kitchen enough today to crank out these rhubarb struesel muffins ❤️And let me tell you, these babies do not disappoint! Lots of chunks of fresh rhubarb(in the batter & struesel topping), and a crispy, orange flavoured sugar topping. It doesn't get much better than that!

Some of y'all have your Christmas trees up & I'm still over here making pumpkin bread...🤷‍♀️I couldn't let those pie pumpkins go to waste! Generously spiced with cinnamon, nutmeg, ginger & cloves & then topped with a cinnamon sugar crust! Perfect for the spice lovers out there! ❤
