Al Truistic’s Beer Bread Bakery creates Craft Beer Breads using the many high quality craft beers produced by Ontario Craft Brewers. Hello I’m Dave Munro and I’d like to tell you a bit about Al Truistic’s Beer Bread Bakery. I started crafting beer breads about 4 years ago when I found my Mom’s old bread machine and my Grandmothers Oatmeal Molasses bread recipe I had adapted fo
r the machine years before. I’d remember beer bread I had tasted in my twenties that was delicious but couldn’t score the recipe. Time and life went by. Finding the bread machine set me on a mission to craft the ultimate beer bread. Since I had primarily enjoyed craft brewed beers since the 90s and craft brewers now are crafting some unique and different brews I decided to use only craft brewed beers for my breads. I initially started with sour dough styled breads as I thought it would truly capture the tastes of the beers. Since I love Granny Smith Apple so the first bread, a Green Apple Pilsner bread, appeared to work well but I found that it was far too expensive to make the breads in that style. I switched to using a dry active baking yeast but believe that, once working with brewers, is an avenue that should explored. Eventually the Green Apple Pilsner bread recipe using yeast was perfected and I moved on to crafting another bread. I wondered if I could use my Grandmothers Oatmeal Molasses bread and the beer I could use to make it? Since the Oatmeal Molasses Bread was a darker bread I wondered how it would work using a Stout. I fiddle with the recipe on paper and made it. It was almost perfect! A small tweak was made to that initial recipe and the Oatmeal Stout bread was born. I started experimenting with other beers like a Golden Ale and Crafted a Honey Garlic Golden Ale Bread and found I could also use Cream Ales and Amber Ales in that recipe. One of my beta testers suggested, since his wife was allergic to garlic if I could do something else and suggested something with caramel since his beer had caramel notes. The Caramel Apple Cream Ale bread was perfected. Other breads crafted since those are a Honey Hemp Lager bread, a Honey Garlic Hemp Lager bread and Maple Hemp Lager bread. Seasonal brews were also used to develop a Maple Ale and Pumpkin Ale breads. I’ve also crafted a few others such as the a Cheddar Onion Oregano APA bread and have some that are works in progress like a Spicy Parmesan IPA bread and Peppercorn Parmesan Black IPA bread. For some of the breads I’ve also crafted Signature Sandwiches. Using the Green Apple Pilsner bread I added Applewood Smoked Cheddar and Bacon then grilled it. I made buns with the Oatmeal Stout bread and made Bison Burgers using these buns. People loved them! I would really like to get these taste experiences into your mouths but need your help. The best way for Al Truistic’s Beer Bread Bakery to get these taste experiences into your mouths is by completing the Food Starter Commercialization Programs. Food Starter is located at the foot of highway 400 in Toronto. They provide a launchpad for discovery, creation and success. They’re a food startup not-for-profit who have a stable of mentors and food scientists that are there to help me scale up recipes and learn the proper techniques to produce my doughs and breads. They have a bakery specific commercial kitchen I’ll need to produce small batches of my breads and the packaging equipment. As well they have incubation space for storage. This will allow me to gain traction and start to grow. Their programs involve a feasibility boot camp and Food Commercialization program that covers everything involved in getting food products to the selves. Al Truistic’s Beer Bread Bakery believes that along with fresh baked breads, frozen breads and pizza doughs will be an excellent revenue stream. Food Starter has the resources to see this through as well. It’s been suggested by some in the industry that it would take about $30000 to get a new food product to market using the Food Starter model. I’d like to raise $30000 to $50000 in order to get things off the ground with pilot runs and to start productions and begin generating revenues. I chose the name Al Truistic’s Beer Bread Bakery as it was a nick name I used years ago, Al Truistic. I’ve lead an altruistic life volunteering countless hours helping others who, like me, were facing the childhood cancer diagnosis of one of their kids. I was the founding Chair of Ontario Parents Advocating for Children with Cancer and sat in that role for the better part of 10 years. Although still a passionate crusader, some of the fire has dimmed so a few years ago I stepped down from that role and the Board. I’m happy to say others have stepped up and OPACC is moving forward gaining more momentum and helping more families every day. Charities, I learned, are businesses, not for profits but still a business. Charities like OPACC struggle with their budgets as they understand only a small percentage of receipted funds can go towards administration. The goal of Al Truistic’s Beer Bread Bakery is to sponsor the Administrative role at OPACC and it’s budget. This will allow them to use 100% of the money they raise for the vital programs they provide their fragile families.
