We are now conducting R&D with organic ancient grains flour grown and milled locally.
This is our first attempt with Sifted Hard Red.
As you can see we achieved a creamy crumb, but it’s quite dense.

Along with hard red, we will also be experimenting with red fife, whole rye, and einkorn.

Please don’t hesitate to barter with us during the R&D process- we love giving discounts to Guinea pigs 😁

This morning we baked two custom multi-grain loaves for a husband and wife. White bread flour, milled flax seed, sesame seeds, sunflower seeds, and pumpkin seeds. The husband prefers a more dense bread with walnuts, so we gave a higher ratio of milled flax to flour (1:4) and added chopped walnuts. For the wife we did a 1:9 ratio and added pecans.
As you can see the top loaf for the husband is slightly smaller in volume because it’s more dense.
We love getting our customers’ recipes perfect for their specific preferences 🥰

Ce matin, on a préparé deux pains multigrains personnalisés pour un couple. Farine de blé blanche, graines de lin moulues, graines de sésame, graines de tournesol et graines de courge. Monsieur préfère un pain plus dense aux noix, on a donc augmenté la proportion de graines de lin moulues par rapport à la farine (1:4) et ajouté des noix hachées. Pour Madame, on a opté pour une proportion de 1:9 et ajouté des noix de pécan.
Comme vous pouvez le constater, le pain du dessus, celui du mari, est légèrement plus petit car plus dense.

The Lac Leamy Fireworks Festival opener in front of the Canadian History Museum was unreal! I have seen many fireworks shows (and personally set up and fired plenty of them) but I think this was the most impressive show I’ve seen up close.
