Hi everyone, Bagel Seoul here! 🥯🤎

We’re excited to reveal even more of our bagel lineup!

We’re introducing 10 additional bagel varieties, each carefully selected after countless rounds of testing, tasting, and perfecting. We’ve put so much time and love into developing these recipes, and we truly can’t wait for you to try them!

And there’s more to look forward to! Alongside our freshly baked bagels, we’ll also be offering a variety of cookies, sandwiches, delicious soups that pair perfectly with our bagels, and much more.

We’ll continue sharing sneak peeks of our menu, so stay tuned for more exciting updates!

Hi everyone, Bagel Seoul here! 🥯

We’re excited to start sharing a few of the items that will be available on our menu.

Just like Boulangerie Seoul, Bagel Seoul will follow our “baked today, enjoyed today” philosophy. Everything will be freshly made in the early morning, so every guest can enjoy our bagels and baked goods at their freshest.

Everything we serve at Bagel Seoul — from our bagels, scones, and cookies to our sandwiches — will be made right here in our shop. We’ll even be making most of our compotes, jams, fillings, and spreads in-house. We want every part of what we serve to feel fresh, thoughtful, and truly made by us.

To stay true to this philosophy, we won’t be doing additional batches throughout the day. This means some items may sell out earlier than expected.

We truly appreciate your understanding and support, and we can’t wait for you to experience what we’ve been working on.

For now, we’re giving you a first look at 8 of our bagels, but this is just the beginning. We’re currently working on a lineup of around 15–20 different bagels, each with its own flavour and character.

Hi everyone, Chef Leo from Bagel Seoul here. 🥯

With our renovations nearly complete, we’ve officially entered the exciting stage of testing and refining our menu — and the results have been incredible. We’re incredibly proud of what we’ve created so far, and today, we’d like to share a little more about what makes Bagel Seoul different.

At many bagel shops in Canada, you choose your bagel, cream cheese, and toppings separately to create your own combination. At Bagel Seoul, we’re taking a different approach.

Every detail — from the texture and flavour of our cream cheese to the toppings and how they complement each bagel — is thoughtfully designed as one complete creation. Each item will be served as we intended it, with every component carefully balanced to bring together the right flavour and texture.

But what we’re most proud of is the bagel itself.

Our bagels are distinctly different from the traditional style you may be familiar with. We’ve developed them to be softer and chewier, without feeling overly dense or heavy — while still delivering that satisfying bite a great bagel should have.

Much of our inspiration comes from the bakery cultures of Seoul and Tokyo — two cities where bakeries continue to push boundaries through flavour, texture, presentation, and unexpected combinations. That spirit of creativity is at the heart of what we’re building at Bagel Seoul.

We’re confident that many of our creations will offer something rarely seen in Canada. Rather than recreating what already exists, our goal is to introduce a bakery experience that feels fresh, exciting, and distinctly our own.

Our menu will feature everything from dessert-inspired and savoury bagels to our own interpretations of cookies, scones, and more.

We’ve spent a great deal of time developing every detail, and we’re incredibly excited to finally share what we’ve been working on.

What was once just the side of our building has turned into one of our favorite little corners. A spot to stop, take a photo, and keep a small memory of your visit with us. 📸

A little Bagel Seoul moment 🥯

It’s been a little while since our last update, but look what finally arrived — our Bagel Seoul boxes and cups!

They turned out SO cute, and they feel even more special because we designed them ourselves. Seeing all these little pieces finally come together is making everything feel so real.

Fall is already in the air, and yes… we know we originally said we’d be opening this summer. Things took a little longer than we expected, but we’ve been working day and night, putting so much love into every little detail.

We’re getting so, so close to finally showing you this space!

We don’t have an exact opening date just yet, but we’ll see you sometime in October. 🤎

Our sign is finally up! 🥯🤎

This is one of those little moments we’ve been waiting for for a long time.

We wanted the sign to feel like it had always belonged to this building, so we painted the wood ourselves, sanded it down, and gave it a slightly worn, vintage look. What seemed like a simple idea ended up taking a few days, lots of little adjustments, and many, many conversations. 😅

But seeing it up there today made it all worth it.

It might just be a sign to someone walking by, but to us, it feels really special. After all the ideas, sketches, changes, and “what about this?” moments… this is the one we ended up with.

And we love it.
In our hearts, it’s the best sign in the world. 🤎

One of our favorite parts of working on the storefront has been meeting so many of you along the way.

While we were painting, sanding, cleaning, and running around, so many people stopped to say hi, ask when we’re opening, what kind of bagels we’ll have, and what we’re planning for the space.

Those little conversations made even the longest workdays feel a little lighter.

So to everyone who stopped by, said hello, or shared your excitement with us — thank you. It gave us even more energy to keep going.

Now that the sign is up, it finally feels like we’re getting really, really close.

(There’s still a lot to do though… 😅)

Little by little, Bagel Seoul is becoming the place we’ve imagined for so long.

We’ll keep working hard until the doors are finally open.

Hello from Bagel Seoul. 🥯

Today, as we worked on the exterior of our building and began removing the old signage, we uncovered something unexpected beneath it — the name “Harley Mall.”

That small discovery made us curious about the building we are about to call home.

So we started looking into its past, and what we found was far more remarkable than we imagined.

For decades, this building has witnessed countless changes. At different points in its life, it was connected to the flour trade, became home to a gun shop, housed a leather repair business, and welcomed many other people and businesses through its doors.

Standing here today, it feels different knowing how much history lives within these walls.

Generations have walked these floors. People built their livelihoods here, worked with their hands, served their community, and left behind stories that became part of this building long before we arrived.

And now, we have been given the opportunity to write its next chapter.

We feel deeply honoured to bring Bagel Seoul into a place with such a meaningful history. Our intention is not simply to make something new, but to respect what came before us while carefully giving this beautiful old building a new life.

We hope that decades from now, Bagel Seoul will also be remembered as another meaningful chapter in the story of this place.

And if anyone in Fredericton knows more about the history of this building — or perhaps even remembers the businesses that once called this place home — we would truly love to hear your stories. Please share them with us in the comments. It would be an honour to learn more about the history we are now becoming a small part of.

We have an exciting update from Bagel Seoul! 🥯✨

Almost all of our kitchen and café equipment arrived today! We’ve carefully selected high-performance equipment to make sure we can serve you the very best bread and coffee — and seeing everything finally come together feels amazing.

We’re currently working on painting and lighting, and we’ve been working day and night because we truly can’t wait to welcome you into our brand-new space. 🤍

We promise to create a beautiful, spotless, and welcoming space that lives up to your expectations.

Thank you for being patient with us even when our updates are a little slow. We’re putting all our energy into making Bagel Seoul something really special.

🥯 A little menu spoiler from Bagel Seoul 👀

We’ve been saying that we’re bringing Seoul-style bagels to Fredericton, so we thought it was finally time to tell you a little more about what that actually means.

If you’ve only had traditional North American bagels, ours might surprise you.

Seoul-style bagels are softer, lighter, and extra chewy, with a texture that’s easy to enjoy whether you’re grabbing one on the go or sitting down for lunch. We wanted to create something that’s familiar enough to feel comforting, but different enough to make you say, “Wait… I’ve never had a bagel like this before.”

And then come the toppings.

We’re not just putting cream cheese on a bagel and calling it a day. 😌

We’ve been testing all kinds of combinations inspired by Seoul’s café culture—some classic, some unexpected, and some that might become your new obsession. Our goal isn’t to copy what’s already out there. We want to bring something fresh and exciting to Fredericton.

Just like Boulangerie Seoul, everything will be baked fresh every morning before we open.

Every sandwich will be made with bagels baked that same day, and we’ll continue following the same philosophy we’ve always believed in: freshly baked every day, never sold the next day. If we sell out, we sell out. Quality will always come first.

Building this menu has honestly been one of the most exciting (and challenging 😅) parts of this journey. We’ve spent countless hours testing recipes, tweaking ingredients, and baking batch after batch until everything felt just right.

📍If everything goes according to plan (please 🤞), we’re hoping to open this September.

Oh, and the bagels you’ve been seeing on our feed?

Those are all real test batches made by Chef Leo while developing the menu. No staged photos—just lots of flour, early mornings, and way too many taste tests. 😂

Thanks for following along and supporting us from day one. We seriously can’t wait to share what we’ve been working on.
