Hi everyone, this is Leo & Sarah from Boulangerie Seoul. 🤍
Since last winter, we’ve been teasing that something exciting was on the way… and today, we’re beyond excited to finally share the news.
We’ve officially purchased our new building!
Our new home will be at 361 Queen Street, the former home of Chess Piece Pâtisserie in downtown Fredericton.
We’re grateful for the care and passion that helped shape this space over the years, and we’re honoured to begin its next chapter.
This isn’t simply a second Boulangerie Seoul location.
It’s the beginning of something entirely new.
Boulangerie Seoul will continue serving you from our original location, while Bagel Seoul brings a completely new experience to downtown Fredericton.

Opening Summer 2026.
Bagel Seoul is a Seoul-inspired bakery built around handcrafted bagels, featuring fresh sandwiches, salads, cookies, scones, and many other creations inspired by Leo’s love for baking.
From the beginning, our dream was never to simply open another bakery—it was to keep creating new experiences, challenge ourselves, and build something that reflects who we are as bakers and as people.
Every recipe has been created from scratch, every detail thoughtfully considered, and every corner of this space is being built with the same passion and care you’ve come to know from Boulangerie Seoul.
This project represents years of dreaming, hard work, difficult decisions, faith, and taking risks. There were moments we wondered if it would ever happen, but we kept believing.
When we first opened Boulangerie Seoul, we never imagined we’d one day have the opportunity to take a step like this.
None of this would have been possible without you.
Every coffee, every pastry, every visit, every recommendation, and every person who believed in us helped make this dream a reality.
We’re working hard to open this summer and will be sharing the entire journey over at bagelseoul . We’d love for you to follow along. 🤍
