As summer begins, we’ve planted flowers in front of the bakery once again. While planting them, we found ourselves thinking, summer is finally here. The flowers are so beautiful, and they bring such a happy feeling to our little corner.

Lately, we’ve been truly overwhelmed by all the love and support from our community. Whether it’s a weekday or weekend, our breads and pastries have been selling out so quickly, and we’re incredibly grateful for every single visit.

Our team has been working hard from the early hours of the morning to prepare everything fresh with care, and seeing so many familiar and new faces walk through our doors means so much to us.

Thank you, always, for supporting our small bakery. We’re so excited to welcome you back soon with new summer menu items.

Hello, this is Leo from Boulangerie Seoul!

We’re excited to introduce a brand new croissant creation — our latest special inspired by Korean old-school bakery culture:

“Raspberry Salted Peanut Croissant”

Peanut butter pastries are common in Canada, and in Korea, peanut cream bread is also a nostalgic classic. However, Korean peanut cream has a completely different texture and flavor profile — honestly, it’s almost an entirely different kind of pastry.

This was one of my favorite breads growing up in Korea. Traditionally, it’s made with brioche dough, but I felt that the rich, buttery layers of a croissant would pair even better — so we made it our own.

Our house-made peanut cream, crafted with a blend of carefully selected ingredients, turned out incredibly special (possibly my favorite cream we’ve ever made). To balance the richness, we added a homemade raspberry compote for a bright, slightly tart finish. The combination of peanut and raspberry is truly something special.

We’ll be launching it this weekend, then bringing it back officially starting Thursday after a little refinement.

Hello, this is Leo from Boulangerie Seoul. We hope everyone had a wonderful Mother’s Day!

This weekend was truly incredible — nearly 2,000 customers visited us between Saturday and Sunday alone. We are beyond grateful for all the love and support you continue to show us. Thank you so much from the bottom of our hearts.

It was an extremely busy weekend, so there may have been moments where our service was not as perfect as we wanted it to be. Thank you for being so kind and understanding with us throughout the rush. We’ll continue working even harder to give you the best experience possible.

We also want to thank everyone for loving our new returning sandwiches this weekend! Our sandwiches are made with focaccia and croissants baked fresh the very same day, and we strictly sell them only on the day they are made. That commitment to freshness is something I’m truly proud of — just like all of our desserts and baked goods. These sandwiches will only be available during the summer season, so we hope you enjoy them while they’re here!

Lately, I’ve been sweating nonstop while working in the kitchen, and it really feels like summer is finally arriving. We already have so many exciting new menu ideas planned for the summer, so please look forward to what’s coming next!

Hello from Boulangerie Seoul,

We are pleased to introduce our new summer seasonal cold sandwich collection — a menu that many of you have been anticipating for quite some time. Over the past several months, we carefully developed and refined each recipe with a strong focus on balance, quality, and craftsmanship.

Rather than creating ordinary sandwiches, our goal was to present elevated flavors using premium ingredients and thoughtful combinations that reflect the identity of Boulangerie Seoul. We will be launching with two signature sandwiches, while a vegan option is currently in development.

🥪 Prosciutto Cheese Focaccia
Made with our house-made focaccia, this sandwich features our signature mayonnaise sauce, premium prosciutto, Swiss cheese, and freshly cracked black pepper.

With only a few carefully selected ingredients, this sandwich highlights the beauty of simplicity. The delicate saltiness of the prosciutto, balanced with the richness of Swiss cheese and the softness of fresh focaccia, creates an elegant and refined flavor profile.

🥐 Basil Ricotta Pistachio Croissant Sandwich
Prepared on our buttery croissant, this sandwich includes basil pesto, fresh arugula, ricotta cheese, pistachios, and Black Forest ham.

Although the ingredients may seem unconventional together, each element was chosen to create harmony in both flavor and texture — fresh, creamy, nutty, and savory all in one bite.

As always, all sandwiches will be made fresh daily and sold on the same day to maintain the highest level of quality and freshness. We are committed to using only carefully sourced premium ingredients while keeping the menu approachable and reasonably priced.

The new sandwich menu will launch this weekend. Following a brief preparation period, it will return as a regular offering beginning next Thursday.

Hello, this is Leo from Boulangerie Seoul.

Mother’s Day is just around the corner, and this year we decided to introduce our special dessert a little earlier.

Our feature for the season is the Double Vanilla Pound Cake. In Korea and Japan, pound cake is often regarded as a refined, premium dessert. Achieving the perfect pound cake requires exceptional ingredients and careful technique throughout the entire process.

For this version, we focused on elevating every step. The cake is generously topped with premium vanilla beans, then brushed with a rich gold rum syrup and carefully matured so the syrup fully infuses into the cake. It is finished with a smooth vanilla bean white chocolate ganache for a rich yet elegant flavor.

You may notice little black specks throughout the cake — those are real vanilla beans, not anything suspicious. We promise.

The cake will be available as a whole cake (9-inch, $65) with pickup available during Mother’s Day week.
Before Mother’s Day, it will also be available by the slice in limited quantities.

Hello, this is Leo from Boulangerie Seoul!

Our signature Pavlova is making a special return this weekend (Saturday, Sunday, and Monday).

This dessert is truly one of my personal signature creations. It features a delicate French meringue shell, topped with light crème chantilly, house-made raspberry compote, and fresh strawberries. The combination of crisp meringue, silky cream, and bright berry flavors makes it a beautifully balanced dessert.

We are not able to produce a large quantity, but we will prepare as many as we can so more of you can enjoy it this weekend.

Hello from Boulangerie Seoul!

These days we’ve been having incredibly busy days thanks to all of our amazing customers. Our bodies might be a little tired, but our hearts are very full. We truly feel grateful every single day for the love and support you give us.

Recently, a few television networks have reached out to our Boulangerie Seoul team with casting invitations. We can’t reveal the program names, but they include baking shows and even family-style programs.

As exciting as that sounds, Leo simply can’t leave the bakery right now because things are so busy. And to be completely honest… Leo is also a little shy and prefers hiding behind trays of croissants instead of standing in front of cameras!

If the right opportunity comes in the future, we would absolutely love the chance to participate and proudly introduce our wonderful customers here in Fredericton to people all across the country.

Boulangerie Seoul continues to grow little by little, and we truly believe it’s all thanks to you. We are always grateful for your support. Thank you for being part of our story.

We have a special treat returning this weekend — our Dubai Chewy Cookies are back. So many of you have been asking for them, and we were able to secure a large batch of the signature ingredients for our Dubai filling. On top of that, we’ve sourced a premium chocolate powder this time, which elevates the flavor even more and makes the taste richer and more refined than before.

We’ve prepared approximately 250 cookies in total, divided between Saturday and Sunday.

Please note that the limit remains 2 cookies per person. Thank you for your understanding and continued support. We’re excited for you to taste the upgraded version this weekend. 🤍
