Hello from Boulangerie Seoul! 🍊

This weekend — Saturday, Sunday, and Monday — our Fruit Roll Cake will be featuring sweet, juicy mandarins!

The mandarins we received this week are exceptionally sweet and delicious, so instead of cutting them into pieces, we decided to fill each roll generously with whole mandarins.

The combination is simply perfect: naturally sweet mandarins, our light and refreshing Korean-style yogurt cream, and a soft, chewy Japanese-style roll cake. The beautiful pop of orange makes every slice look stunning — and it tastes even better than it looks. 🍊✨

We’ve prepared approximately 150 pieces for the weekend, so there will be plenty to enjoy!

As always, our team will be starting bright and early to prepare plenty of fresh breads, pastries, and desserts for you. 🥐✨

Hello from Boulangerie Seoul! 💛 It’s been a while, and we’re excited to be back with a special menu for you.

This time, our baker Jiyeon has created something truly special: a Japanese-style Fruit Roll Cake! 🍓🍊🥝

This isn’t your typical roll cake. It features a uniquely soft and chewy cake layer with a texture you may not have experienced before, filled with a light and refreshing cream made with Korean yogurt powder and fresh cream.

Each roll is generously filled with fresh fruit carefully selected for the best flavor and quality. The fruit selection will vary, so each roll may feature a different combination of fruits.

The combination of the chewy cake, tangy yogurt cream, and fresh fruit is something we’re especially excited for you to try — and it’s a style of roll cake that’s not easy to find here in Canada.

Our Fruit Roll Cake will be available this weekend and next weekend only. We’re preparing plenty, but quantities will still be limited each day and may sell out early.

Hello everyone!

We wanted to give you a quick heads-up about this Friday!

The CBC team will be visiting Boulangerie Seoul to film a feature and interview some of our wonderful customers about our bakery and our community.

Fridays are already one of our busiest days, so the bakery may be a little busier than usual. Around lunchtime, you’ll likely see cameras, lights, and reporters in the shop, and some customers may be invited to participate in a short interview.

We truly appreciate your patience and understanding if you’re visiting us that day. Your support, kindness, and encouragement have meant everything to us, and we’re so grateful to be able to share a small part of our story with a wider audience.

Thank you for being part of this journey with us. We can’t wait to share the CBC feature with you soon!

Hi everyone, this is Leo & Sarah from Boulangerie Seoul. 🤍

Since last winter, we’ve been teasing that something exciting was on the way… and today, we’re beyond excited to finally share the news.

We’ve officially purchased our new building!

Our new home will be at 361 Queen Street, the former home of Chess Piece Pâtisserie in downtown Fredericton.

We’re grateful for the care and passion that helped shape this space over the years, and we’re honoured to begin its next chapter.

This isn’t simply a second Boulangerie Seoul location.

It’s the beginning of something entirely new.

Boulangerie Seoul will continue serving you from our original location, while Bagel Seoul brings a completely new experience to downtown Fredericton.

Opening Summer 2026.

Bagel Seoul is a Seoul-inspired bakery built around handcrafted bagels, featuring fresh sandwiches, salads, cookies, scones, and many other creations inspired by Leo’s love for baking.

From the beginning, our dream was never to simply open another bakery—it was to keep creating new experiences, challenge ourselves, and build something that reflects who we are as bakers and as people.

Every recipe has been created from scratch, every detail thoughtfully considered, and every corner of this space is being built with the same passion and care you’ve come to know from Boulangerie Seoul.

This project represents years of dreaming, hard work, difficult decisions, faith, and taking risks. There were moments we wondered if it would ever happen, but we kept believing.

When we first opened Boulangerie Seoul, we never imagined we’d one day have the opportunity to take a step like this.

None of this would have been possible without you.

Every coffee, every pastry, every visit, every recommendation, and every person who believed in us helped make this dream a reality.

We’re working hard to open this summer and will be sharing the entire journey over at bagelseoul . We’d love for you to follow along. 🤍

Thank you so much to everyone who visited us today for Canada Day.

We prepared around 800 desserts this morning, and when we saw how quickly everything was selling out, we made an additional 200 desserts during the day. Even so, almost everything sold out much earlier than we expected.

We believe more than 1,000 guests visited us today, and we are truly grateful for your incredible support.

For those who travelled a long way to visit us but were unable to get the desserts you were hoping for, thank you for your understanding. We will do our very best to be better prepared next time.

Thank you again for making this Canada Day so special for us.

As summer begins, we’ve planted flowers in front of the bakery once again. While planting them, we found ourselves thinking, summer is finally here. The flowers are so beautiful, and they bring such a happy feeling to our little corner.

Lately, we’ve been truly overwhelmed by all the love and support from our community. Whether it’s a weekday or weekend, our breads and pastries have been selling out so quickly, and we’re incredibly grateful for every single visit.

Our team has been working hard from the early hours of the morning to prepare everything fresh with care, and seeing so many familiar and new faces walk through our doors means so much to us.

Thank you, always, for supporting our small bakery. We’re so excited to welcome you back soon with new summer menu items.
