Artisan Pretzels and Sprouted Farro with Beer and Maple Bread
The pretzels were dipped in lye solution which is caustic, but when subject to high temperatures, it stabilizes and creates that smooth and reddish golden brown finish to the pretzels. We also added a sour culture to the dough so they are more easily digestible. Baking is science!
